Rava dosai

Ingredients:

  • Rava - 1 cup
  • Maida - 1 cup
  • Rice flour - 1/2 cup
  • Cumin seeds - 1 tsp

  • White pepper powder - 1 tsp
  • Salt
  • Buttermilk - 1 cup
  • Water
  • Oil





Method:
  • Mix all the ingredients in a bowl into a thin consistency.
  • Heat tava, Sprinkle the mixture when it is hot.
  • Add oil or ghee and make crispy dosas.














I have served it with Coconut Chutney.

Crispy Rava dosas ready.

Kiwi Longan Trifle

Very simple and tasty dessert for kiwi lovers. I have added Longan to it..Longan and Rambuttan are our one of the favourite fruits. Of course Litchie too. Enjoy it.















Ingredients:

  • Kiwi - one
  • Longan - 10
  • Q whip

Method:
  • Take a glass , add the deseeded Longan.
  • ON the top of it add chopped kiwi.
  • Add the q whip above it.
  • Enjoy this super cool healthy dessert.

I feel very excited to host my first event. Its been 3 years here, but took a long break of 2 years. Thanks to all my family members who encouraged me to cook however its output was.. Now I am very happy to try out new dishes for my hubby and baby.

Thenkuzhal/Murukku

Very happy to make this thenkuzhal. I used to make this with my grandmother in my school and college days. The press shown in the picture is my grandmother's made of brass. Its very handy and easy to press murukku, oma podi, nada pakoda,mullu thenkuzhal. Thanks Paati for giving it to me. Love it !

Ingredients:

  • Rice and urad dal flour( Rice 6 cups: urad dal 1 cup ground together) - 1 cup
  • Cumin seeds - 1 tsp
  • Asafoedita - 1/4 tsp
  • Oil
  • Salt
  • Water
  • Murukku press with thenkuzhal

Method:

  • Take flour in one bowl, add cumin seeds, asafoedita and salt.
  • Heat 1 table spoon oil in the pan.Add it to the flour.
  • Knead it by using water into soft dough.
  • Take the thenkuzhal mould and take a ball of flour and fill it inside.
  • Meanwhile heat oil, when the oil is ready, pressthe mould into the boiling hot oil.

Crispy Thenkuzhal is ready....

Bombay chutney/ Besan flour chutney

Ingredients:

  • Besan flour - 1 cup
  • Onion - 1
  • green chilly - 2
  • Turmeric powder - 1/2 tsp
  • Oil
  • Water
  • Gram dal - 1 tsp
  • Mustard seeds - 1 tsp
  • Urad dal - 1 tsp
  • Curry leaves
  • Coriander leaves
  • Salt

Method:


  • Mix besan flour, turmeric powder , salt and water in a vessel.
  • Heat oil in a pan, temper mustard seeds, urad dal, gram dal, curry leaves.
  • Fry onions and green chillies.
  • Add the besan mixture into the onions.Mix well.
  • Close it and allow it to boil for 5 mins.
  • Stir well, check if the besan is boiled well.
  • Garnish with Coriander leaves.

Serve with Chapathies..

Black and white wednesday


Its the famous bajji shop in mylapore, chennai.. So called Pitchupillai street. One side bajji and the other side they sell idlies and tiffin varieties. Its close to Kapaleeshwarar temple.You can imagine the queue there. Once me and my friends went to temple and had bajjies here..

Bread protien Toast/ Bombay toast



This is a very simple recipe, I love it.Very nutritious and tasty too. Perfect for breakfast.

Ingredients:

  • Bread - 4 slices
  • Egg - 1
  • Milk - 1/2 cup
  • Sugar - 2 tsp
  • Oil

Method:

  • Break egg and mix it with milk in a plate.
  • Add sugar to it.
  • Stir well, till the sugar disolves.
  • Heat a tava, Take the bread slices and dip in the mixture on both the sides and place it on the tava.
  • Add oil in toast it.
  • Remove it when its dne on both the sides.

Tasty bread protein toast ready.

Mutton Kurma - My mom in law's authentic style

This is my mom in law's special dish We all love her mutton kurma. We would love to have it for the 3 course of meal. Its very simple and tastier . but I do not get her taste, may be the hand's taste differs. Enjoy her authentic falvor of mutton kurma.

Ingredients:

  • Mutton - 500 gms( cut into small pieces)
  • Onions - 2
  • Tomatoes - 2
  • Chilly powder - 1 tsp
  • Coriander powder - 2 tsp
  • Green chilly - 2
  • Ginger garlic paste - 2 tsp
  • Brinji leaf - 2
  • Cinnamon - 1 "
  • Cloves - 4
  • Curry leaves
  • Coriander leaves
  • Oil
  • Water
  • Coconut paste - 1 cup

Method:


  • Boil mutton with salt in cooker separately and keep it aside.
  • Heat oil in a pan, season bay leaf, cinnamon, cloves.
  • Add green chillies,curry leaves, onions. Saute well
  • Add ginger garlic paste.Fry them well , till raw smell leaves.
  • Add Tomatoes and salt. Add Chilly powder , coriander powder.Fry them well.
  • Add boiled mutton, water and allow it boil.
  • After the gravy is boiled and cooked, add the coconut paste.
  • Let it boil for 5 -10 mins.

Garnish with Coriander leaves.

Yam fry


Ingredients:

  • Yam sliced - 5
  • Chilly powder - 1 tsp
  • Coriander powder 1 tsp
  • Turmeric powder - 1/2 tsp
  • Tamarind water - 2tsp
  • Salt

Method:

  • Marinate all the above items and keep aside
  • In a tava, add little oil and shallow fry the yam one by one.

Tastes really yummy with all the rice items.

Semiya Pulao


Ingredients:

  • Semiya - 1 cup
  • Onion -1
  • Ginger garlic paste - 1/2 tsp
  • Pepper powder - 1 tsp
  • Capsicum - half finely chopped
  • Carrot - half - grated
  • Ajinomotto - 1/2 tsp
  • Salt
  • Water
  • Oil

Method:

  • Dry roast semiya and boil it in water. Drain it and add cold water to it and keep it aside.
  • Heat oil in a pan, add onions. Fry well.
  • Add ginger garlic paste.Fry till raw smell disappears.
  • Add capsicum,carrot. Mix well and stir it.
  • Add salt Ajinomotto, pepper powder. Stir well.
  • Add semiya at last and mix them well.

Very simple and yummy dish to have for dinner. My hubby just loved it.

Moong dal Banana Delight


Its more similar to kheer. I tried a new flavour of adding banana to it. It gave really a good flavour to the regular kheer. We realy loved it. Thought of sharing so that everyone can try and relish.

Ingredients:

  • Moong dal - 1/4 cup
  • Water
  • Milk - 2 cups boiled
  • Condensed milk - 1 cup
  • Cardamom powder
  • Yellow food colour optional
  • Banana -1
Method:

  • Boil water in a vessel , add moong dal to it and boil it.
  • After the dal is boiled, add the chopped banana. Allow it to boil.
  • Meanwhile boil milk separately.
  • Add the condensed milk to the boiled banana. Stir well.
  • Now add milk and allow it to mix well.
  • Add cardamom powder and yellow colour to it.

Mouth watering MOong dal banana delight is now ready.

Crispy Golden Chicken


Ingredients:

For marination:


  • Chicken(breast pieces cut it lengthwise) - 250 kg
  • Egg (white) -1
  • Pepper powder - 1 tsp
  • Lemon juice
  • Ginger garlic paste
  • Salt

For frying:

  • Grind cornflakes and oats coarsely.


Method:

  • Marinate all the above items for about 2 hrs.
  • Dip it in the ground cornflakes and oats mixture.
  • Heat oil in a pan and fry them,

Serve it with sauce.

Rose Cashew Halwa


Ingredients:

  • Rose syrup - 2 tsp
  • Maida - one cup
  • Sugar - 1 1/4 cup
  • Ghee - 2 tbsp
  • Cashews broken - 15
  • Water

Method:

  • Firstly roast the maida in 1 tbsp of ghee. Stop wen colour changes and fried smell releases.
  • Make sugar syrup of 2 string consistency.
  • Add the maida to the sugar syrup.
  • Add the Rose syrup to it.
  • Stir well. Add the cashews and mix well.Add the remaining ghee and keep on stirring till it comes a ball like consistency.
  • Transfer it into the bowl.

I have presented it with rose flower and cashew.

Moong Dal Chaat


Ingredients:

  • Moong dal fried
  • Onion -1 finely chopped
  • Tomato - half finely chopped
  • Cucumber small - 1 finely chopped
  • Coriander leaves
  • Chat masala
  • Salt
  • Lemon juice -1 tsp

Method:

  • Mix all thhe above ingredients and garnish with Coriander leaves.

Super Chaat ready.

Karamani gravy


Ingredients:

  • Black eyed peas - 1 cup soaked and boiled
  • Onion - 1
  • Tomato - 1
  • Ginger garlic paste - 1/2 tsp
  • Chilly powder - 1/2 tsp
  • Green chilly - 1
  • Coriander leaves
  • Salt
  • Oil
  • Water

Method:

  • Heat oil in a pan, fry onions and green chilly.
  • Add ginger garlic paste and fry till raw smell disappears.Add tomato to it.
  • Add chilly powder and salt.Add water and allow it to boil for 10 mins.
  • Add the boiled karamani and water if required.Allow it to boil for 5 mins.

Garnish with coriander leaves.

Tastes yummy with Chapathi.

Rose milk


Ingredients:

  • Rose syrup - 2 tsp
  • Cold milk - 1 glass

Method:

  • Blend both in a blender. Serve it chill.

Chicken Green curry


Ingredients:

  • Chicken - 500 gms
  • Onion- 1
  • Oil
  • Water

To grind:

  • Green chilly -3
  • Coriander leaves - one handful
  • Mint leaves - one handful
  • Cinnamon - 1"
  • Cloves - 4
  • Ginger garlic paste - 1 1/2 tsp
  • Coconut - one handful
Method:
  • Heat oil in a pan, add onions and fry them well. Add little ginger garlic paste to it.
  • Add the chickens, mix them well. Add salt to it.
  • Add the ground masala and allow it to cook well. Add water and close and cook it for 10 mins.

Yummy Curry ready. Serve with Saffron rice or chapathi.

Mutton Shami Kabab

Ingredients:

  • Minced Mutton / Kheema- 500gms
  • 5-6 cloves garlic
  • 1″ piece ginger, roughly chopped
  • 1/2 cup chana dal, washed and soaked
  • 1 portion fresh garam masala
  • 2 bay leaves
  • 1/4 cup water
  • Coriander leaves - one handful
  • Mint leaves - 1 handful
  • Chilly powder - 1/2 tsp
  • 2 tsps clarified butter, ghee Salt to taste


Method:
  • Mix the mince with all the ingredients, except the clarified butter / ghee, in a pressure cooker, and cook under pressure, for 5-6 whistles.
  • Allow to cool for at least 30 minutes, open and dry any remaining liquid on high heat. Discard the bay leaves.
  • Grind in a processor.
  • heat butter in a tava.
  • Take lemon sized portions, and make neat, tight patties between the palms of your hands.

Serve hot with a finely sliced onions tossed in lime juice.
