Rice phirni is actually made on the day of Ramzan with all the richness in it... It is made of rice and all the dry fruits mixed in it. Traditional sweet. It was a long time dessert in my list to post it, which I made it for last Ramzan. Today is my dad's Birthday , so I thought of sharing this sweet. Wishing him a very happy birthday and long life..

Ingredients:
- Basmati rice - 1/2 cup
- Milk - 2 cups
- Sugar - 3/4 cup
- Cardamom powder or Saffron
- Cashews
- Ghee - few tsp
- Water
- Yellow food color
Method :
- Wash and soak the rice in water for half an hour or more.
- Grind it into a thick paste, a little coarsely
- Add the boiled milk in a vessel, add the ground rice paste.Allow the rice to boil nicely .
- When the rice is boiled, add the sugar. Stir well. You can also add condened milk.
- Add the food color, if you are not adding saffron. Add the cardamom powder as well.
- Stir the phirni nicely. It becomes thicker and thicker as the rice is ground and boiled, it may stick on to the vessel if unattended.
- Heat ghee in a pan, fry the cashews and raisins.
- Add to the phirni.
It can be served both hot and cold.
