Aloo Palak / Spinach Potato curry

 This is such a wonderful dish . Very healthy tooo. Best way to eat spinach. My hubby loved the addition of spinach to it.

 

Ingredients:

  • Potato - 3-4 boiled and cubed
  • Spinach leaves - 1  bunch chopped
  • Onion - 1 big chopped
  • Tomato - 2 chopped
  • Chilly powder - 1/2 tsp
  • Coriander powder - 2 tsp
  • Salt
  • Cumin seeds - 1/2 tsp
  • Oil
  • Water


Method:

  • Heat oil in a pan, add cumin seeds.
  • add onion and fry them till golden brown. Add crushed garlic and ginger.
  • Saute them well. Add tomatoes. stir well, till tomatoes become mushy.
  • Add chilly powder, coriander powder, salt and potatoes to it.
  • Cook till they form like a masala.
  • Add the chopped spinach to it at the end and cook for 10- 15 mins.






Perfect with curd rice ! Inside a wrap too... !!

Cabbage Pakora / Gose pakoda

 Simple and yummy snack. I a sure everyone would love it.



Ingredients:

  • Cabbage - finely chopped
  • Besan flour - 1 cup
  • Rice flour - 2 tsp
  • Salt
  • Chilly powder - 1 tsp
  • Oil for frying

 Method:

  • Mix all the above ingredients nicely.
  • Do not add water, while mixing. Cabbage leaves some water while kneading.  That is sufficient.
  • Heat oil in a pan, take little by little and put it in the hot oil by spreading your hand. So that no big chunks fall into the oil.
  • Fry on medium flame.





 Crispy and crunchy pakoras are ready!

Chicken clear soup

 Ingredients:


  • Chicken fillet - 200 gms
  • Water
  • Ginger garlic paste - 1/2 tsp
  • White pepper powder - required
  • Salt

Method:


  • Wash and cut the fillets into small pieces.
  • In a pan, add the chicken, and water. Add ginger garlic pste.
  • Close it with lid and cook till the chicken is boiled.
  • Add Pepper powder and salt.

Quick and yummy soup !

Palak ki dal





Ingredients:


  • Spinach - 1 cup washed and chopped
  • Moong dal - 1/2 cup
  • Turmeric powder - 1/4 tsp
  • Ginger - grated 1 tsp
  • Cumin seeds - 1 tsp
  • Ghee - few tsp
  • Red chilly - 1
  • Asafoedita
  • Salt
  • Garlic - 4 cloves finely chopped

Method:


  • Wash moong dal and soak in water for 20 mins.
  • Add the dal into pressure pan, Addd required water for it to cook well.Add turmeric powder and ginger and boil it for 4-5 whistles.
  • After the pressure is released, add the spinach and salt and cook in simmer till the spinach is cooked well.
  • Heat another pan, add ghee, when the ghee is hot, splutter cumin seeds, garlic and red chilly.
  • Add to the cooked palak dal.

 




Serve hot with Rotis. You will definitely like it !

Rose Milk Peda

Rose Milk peda is a wonderul dessert. Simple yet delicious.



Ingredients:

  • Milk powder - 1 cup
  • Rose syrup - 3 tsp
  • Condensed milk - half cup
  • Butter - 1 tsp




Method:

  • Mix all the ingredients together in a bowl.
  • Knead slowly , dont put uch pressure.
  • Heat a nonstick pan, add the dough and a sp of butter.
  • Mix it well and stir occasionally.
  • Switch it off once its done. allow it to cool. 
  • Take small balls into the palm and rub it into desired shape.



Lovely milk pedas in the flavor of rose is ready.... Enjoy !!

Rasmalai

Rasmalai  is a sweet dessert originating in Eastern India and popular throughout the Indian subcontinent. Is served after a meal. It is popular throughout South Asia. The name Ras Malai comes from two parts in Hindi: Ras, which means Juice/Juicy, and Malai, which means cream.

 Ras Malai consists of sugary white, cream or yellow colored balls (or flattened balls) of paneer soaked in malai (clotted cream) flavored with cardamom.

Ingredients:


  • Fresh milk for paneer - 1 litre
  • Fresh milk for ras - 2 cups
  • Condensed milk( I used low at milkmaid) - 1 cup
  • Cashews , pistachios and almonds broken - few
  • Cardamom powder - 1 tsp
  • Sugar - 1 cup
  • Water -  1 cup 
  • Lemon juice -  juice from 2 lemons
  • Saffron strands
  • Love - lot more

Method:


For Soft cheesy paneer :



  • Heat the milk in a vessel and allow it to boil.
  • Once its done.Pour the lemon juice into the milk and stir well in simmer.
  • Slowly the milk is separated into water and cheese.
  • Switch off and drain it in a Muslin cloth , add cold water to it and hang it for an hour.
  • after an hour, pat the cloth gently to remove the exess water and it rolls into a small dough.
  • Take small balls of it in the hand and gently roll it. Slightly flatten it and keep aside.

For The malais to get boiled :



  • In another vessel or may be cooker, add 5 cups of water and one cup of sugar.
  • Allow it to dissolve. Once done, add the flattened paneer to it. 
  • Cook it for one whistle.
  • Remove it from the sugar water and keep it aside.

For Ras :



  • Heat the milk in another vessel, allow it to boil and reduce half the quantity.
  • Now add the condensed milk, chopped nuts.
  • Let it cook for 5 mins. Add the cardamom powder and saffron.

Serve the malais with Ras. Garnish with nuts!

Masala Sundal

Today's Neivedhyam for ayudha pooja and Saraswathi pooja is masala sundal.

Ingredients:


  • White Chickpeas - one cup
  • Salt
  • Oil
  • Mustard seeds
  • Curry leaves
  • Coconut grated
  • Asafoedita

To grind:


  • Coriander seeds - 1 cup
  • Gram dal - 2 tbsp
  • Red chilly - 4
  • Asafoedita - 1/4 tsp
  • Salt
 
 
Method:

  • Dry roast the To grind ingredients in a pan.
  • Allow it to cool down and grind it coarsely.
  • Soak the chickpeas overnight and boil it in cooker.
  • Heat oil in a pan, splutter mustard seeds, curry leaves and Asafoedita.
  •  Add the cooked channa, salt and the ground powder.
  • Add the grated coconut finally. stir well for 2 mins on flame.

Almond Candy rice / Badam Kalkandu sadham

Today is a very special day for me. My hubby's birthday. Wishing him a very happy birthday. Love him all success and joy ! Have tried a sweet. I will post it sooner.

Happy Saraswathi and Ayudha pooja to all my friends ! Happy holidays!



Today's neivedhyam is Almond candy rice. usually my grandma used to do Candy rice. i jus made a variation by adding badam to it. It tasted good with it..

Moving on to recipe:



 Ingredients:

  • Raw rice - 1 cup
  • Sugar candy - required according to sweetness
  • Almond - 10- 12
  • cardamom powder - 1 tsp
  • Saffron ( Optional) a pinch
  • Ghee - 3-4 tsp



 Method:

  • Wash rice and cook rice for 4 whistles.Grind the almonds into dry coarse powder.
  • In a vessel or pan, add the cooked rice, little water.
  • Add candy. Allow it to dissolve and mix with rice. 
  • Add the ground almonds. Add ghee and stir well.
  • Finally add saffron and cardamom powder.

 

Simple and yummy sweet is ready.
