Lunch box menu # 2


Today s lunch box menu item will be coconut rice,ivy gourd poriyal and buttermilk.

Coconut rice recipe

ivy gourd poriyal recipe :

Ingredients: 

  • Ivy gourd - 1 cup cut lengthwise
  • Sambar powder - 2 tsp
  • Turmeric powder - 1 tsp
  • Salt
  • Oil
  • Mustard seeds
  • Urad dal
  • Asafoetida
  • Water
  • Curry leaves


Method: 

  • Heat a pan, add oil. Splutter the mustard seeds, urad dal, asafoedita, curry leaves.
  • Add the ivy gourd, sambar powder, turmeric powder , salt and water for the vegetable to boil.
  • Close with lid and cook it till the vegetable is boiled and fried.
  • If you want it to be a fried one. Add extra oil and keep in simmer. Ivy gourd poriyal tastes yum with all the dishes.

From today I will be updating lunch box menu which I pack for my husband. He prefers a simple lunch box with less quantity. So the dishes would be simple and tasty and filling too...

Custard cookies/ eggless custard cookies

Cookies are a wonderful tea time snack. Custard cookies are easy and yummy to make. It will melt in mouth. Custard cookies give a different flavour to the cookies and cookies are very soft. It can be kept for kids snack box as well as evening snack for kids.



Ingredients:


  • Custard powder- 3/4 thcup
  • All purpose flour - 1 cup
  • Sugar powder - 3/4th cup
  • Butter- 1 cup


Method: 


  • Take a bowl, add the sugar and butter and mix well into a creamy mixture.
  • Add APF and custard powder and knead it into a soft dough.
  • Make small balls from the dough and press it with a fork to make a design and to make it as roundels.
  • Place the ready cookies on a greased plate or tray.
  • Preheat the oven at 180 degrees for 10 mins.
  • Place the tray inside the oven and bake for 15 mins at 180degrees.

Crunchy soft custard cookies are ready!

Milaga Bajji / Mirchi Bajji/ Chilly Fritters


Bajji is a snack enjoyed by all during rainy days especially. Bajji is called fritter which is made using any vegetable, even bread, papad can be used for making it. Here I am using chilly , it is famously called bajji milaga because it is predominantly used for making bajji.



I have used my Bajji bonda mix here.



Ingredients:





Method:


  • Wash the chillies and slit in between using a knife.
  • Take the bajji bonda mix in a bowl. Add the required salt and water to make the batter.

  • Heat oil in a pan, take the chilly one by one and dip it in the batter and deep fry it.
  • Strain the excess oil and place it in a plate covered with tissue or kitchen towel.



Crunchy bajjis ready!

Palak Pulao/ Spinach Pulao



This rice variety is a good one pot , healthy meal. It is perfect for lunch boxes. I tried this recipe from my blogger friend Jeyashri Suresh From Jeyashri Kitchen. It tasted yummy. It can be accompanied with chips and raitha. A very simple and easy recipe to follow.



Ingredients:



  •    Palak| Spinach -   1 cup 
  •     Basmati rice -  1 and 1/2 cup
  •    Coriander leaves  - one handful
  •   Green chili  1-2
  •   Potato  -1 boiled and chopped into cubes
  •   Green Peas  = 1/4 cup boiled
  •   Onion - 1 chopped into julinnes
  •   Garlic -  2 pods
  •   Coconut -  1 tblsp (optional)
  •   Bay leaf  -  1
  •   Oil  
  •   Salt    




Method:


  • Wash the Basmati rice and soak it with 3 cups of water for 30 mins.
  • Heat a tsp of oil, saute the palak, coriander leaves, garlic pods and green chilly.
  • Grind it into a fine paste along with coconut.
  • Heat pressure cooker, add oil, temper bay leaf , add onions and saute well.
  • Add the ground palak and saute for few mins , add potatoes and boiled peas. 
  • Saute for 2 mins. Add the soaked rice and required amount of salt.
  • Cook it for about three whistles.



Yummy lunchbox dish! Serve with raitha and chips.

Varagarisi upma kozhukkattai / Kodo millet upma kozhukkattai


Upma kozhukkattai is a tiffin item . Those days my paati used to make arisi upma, upma kozhukkattai.. Missing those days. But I was very happy to make it for the first time using kodo millet and it tasted awesome! It tasted the same way as my paatis.. It's very aromatic! 

I had this upma kozhukkattai and coriander chutney in my friend aunty' house and loved the combo... Do try it , I am sure you will love it! 



Ingredients:


  • Varagarisi - 1 cup
  • Coconut - 1/2 cup grated
For tempering:
  • Coconut oil
  • Mustard seeds - 2 tsp
  • Channa dal / Bengal gram - 3 tsp
  • Curry leaves
  • Green chilly -1
  • Red chilly -2
  • Salt
  • Hing -1/4 tsp
  • Water -  2 cups
Method:

  • Wash the millet with water and drain and keep it aside.
  • Heat a pan, add coconut oil and temper mustard seeds, dal, curry leaves, chilly, hing,chillies.
  • Add the two cups of water, add the grated coconut and salt.
  • Bring it to a boil. As soon as the water is boiled , add the millets..
  • Keep on stirring till the rice is cooked and absorbs the water. It will be half cooked.
  • Keep stirring till it comes to the consistency to roll in hands as kozhukkattai..
  • Switch off and allow it to cool.
  • Heat a idly pan , and grease the idly plates.
  • Take small small balls from the upma and roll it into kozhukkattai form and place it on the plate.
  • Steam it for abt 7-8mins.

Wonderful tasty soft upma kozhukkattais ready!

Broccoli Omlette



Omlette is a super side dish for all the rice items and as a starter too.. Adding broccoli to it adds more valur=e tot th dish and makes it more healthier. A best way to add broccoli in your kids meal.. It tastes great too.






Ingredients:


  • Broccoli - 10 florets 
  • Egg -2
  • Salt
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Oil



Method:



  • Wash and chop the broccoli florets into small pieces.
  • In a bowl, mix egg, chopped broccoli,turmeric powder,pepper powder and salt.
  • Stir well and mix it.
  • Heat a tava, add a tsp of oil, pour the mixture. Add a tsp of oil to cook.
  • Flip over the omlette to cook on the other side.



Yummy healthy omlette ready!
