Pudhina Poori / Mint Poori


This week ,we are seeing tiffin varieties . Today's special is Pudhina poori. It can be done in a jiffy.. Everybody will like this flavorful poori. I can be had with or without side dish. If you are health conscious, you can make it as chapathi also. I have made it in poori version. 





Ingredients:



  • Wheat  flour - 1 bowl
  • Water - required
  • Mint chutney or paste - 2 tbsp
  • Salt if required


For chutney:

  • Mint - 1 bunch
  • Urad dal - one handful
  • Red chilly - 3
  • Tamarind- small piece
  • Garlic - 3 cloves
  • Salt
  • Oil



Method:

For chutney:


  • Heat a tsp of oil in a pan, add urad dal, red chilly,tamarind and garlic.
  • Fry till golden brown.
  • Add the mint leaves and stir it.
  • Allow it to cool down and grind it coarsely.

For pooris:
  • Mix all the ingredients together. 
  • Add the required ground mint chutney.
  • Knead them using water into a soft dough.
  • Keep it aside for 1 hour.
  • Take small balls and dust it using flour and make regular pooris.
  • Heat oil in a pan, fry the pooris. 

Serve hot with curd .

Savory Kuzhipaniyaram/ Kara kuzhipaniyaram


Paniyarams raining here. Since I posted sweet paniyaram yesterday ,today it is savory. Its ultimate to have both of this for dinner. These dumpling are easy to make and you can make variations in this paniyaram.




Ingredients:


  • Raw rice - 3 cups
  • Par boiled rice - 3 cups
  • Urad dal - 1/2 cup
  • Fenugreek seeds - 1 handful
  • Water
  • Salt
  • Corinader leaves - chopped

For tempering:

  • Onion - 2 chopped finely
  • carrot - 1 grated 
  • Mustard seeds - 2 tsp
  • Gram dal - 2 tsp
  • Green chilly - 2 chopped finely
  • Curry leaves chopped
  • Oil


 

Method:


  • Soak rice, urad dal an fenugreek seeds for 5 hrs.
  • Grind it like dosa batter in a grinder. Allow it to ferment.
  • In another pan, add the oil and all the tempering ingredients. fry the onion and carrot nicely. Add the chopped coriander leaves and keep it aside.
  • Take the required batter in a vessel and add the tempering and mix well.
  • Add the required salt to the batter.
  • Heat the paniyaram tava, Add a tsp of oil in all the holes.
  • Add the batter in the holes.
  • Fry them on both the sides slowly and keep turning until it is cooked on both the sides.



Perfect kuzhipaniyarams ready to be served along with spicy chutneys.

Sweet paniyaram/ inippu paniyaram


Todays special is yummy kuzhipaniyarams. This version is sweet. It is very simple to make paniyarams. Enjoy these cute little momos along with the savory version.





Ingredients:


  • Raw rice - 3 cups
  • Par boiled rice - 3 cups
  • Urad dal - 1/2 cup
  • Fenugreek seeds - 1 handful
  • Jaggery - required
  • Oil
  • Water
  • Cardamom powder - 1 tsp





Method:


  • Soak rice, urad dal an fenugreek seeds for 5 hrs.
  • Grind it like dosa batter in a grinder. Allow it to ferment.
  • Take the jaggery and add water in a pan. let the jaggery dissolve.
  • Strain the jaggery syrup and keep it aside.
  • Take the required batter in a vessel and add the jaggery syrup according to the sweetness of the jaggery.
  • Mix the cardamom powder to thebatter and mix well.
  • Heat the paniyaram tava, Add a tsp of oil in all the holes.
  • Add the batter in the holes.
  • Fry them on both the sides slowly and keep turning until it is cooked on both the sides.




Yummy mouthwatering paniyarams ready to serve!

Chicken Stirfry



Chicken starter is alltime favorite for most of us. This recipe is a simple and tasty starter. It can also be used as a side dish for rice varities. It can also be stuffed inside parathas as wraps. I got the idea of this recipe in a TV show with few variations. Chicken lovers will definitely relish this. My blog was empty these many days without my posts. Hee come this recipe to decorate my blog. Enjoy and have  fun!




Ingredients:


  • Boneless chicken - 250 gms
  • Lemon juice - one lemon
  • Egg white - 1
  • Garlic chopped finely - 10 cloves
  • Curry leaves - 2 strips
  • Salt
  • Red chilly paste - 3 tsp
  • Coriander powder - 2 tsp
  • Coriander leaves - chopped for garnish





Method:


  • Wash and chop the chicken into small cubes.
  • Take a vessel, add the chopped  chicken. Add the rest of the above ingredients to the chicken except coriander leaves. Marinate and leave it for 30 mins.
  • Heat a pan, add some oil and add the marinated chicken and cook on low flame.
  • Keep stirring often. Close and cook it till the chicken is boiled. saute it nicely.
  • Ad oil if necessary. stir it occasionally till the chicken and the masala combines well with one another.
  • Finally add the coriander leaves.



Tasty smoky chicken stir fry is ready as a starter.

Garlic Naan


After the naan post, I update here Garlic naan recipe ... One of my favorites...




Ingredients:

  • Maida/all purpose flour -2 cups
  • Curd or sour curd - 1tbsp
  • Baking powder -1/2tsp
  • Salt
  • Water if needed.
  • Butter
  • Sugar - 1/2 tsp
  • Oil -3tsp
  • Gar;ic chopped - required
  • Coriander chopped


Method:

  • In a vessel take all the above ingredients and knead well into a soft dough.
  • After 2 hrs, you can see the dough will be fermented and loosened.
  • Apply oil on it and knead well and keep aside for 10 mins.


  • For rolling it, take a rolling pan, take a ball from the dough. Roll it in oval shape. Spread it well.
  • apply butter to the naan on both sides and sprinkle thechopped garlic an coriander leaves.
  • Heat a nonstick tava, sprinkle some water to it and place the rolled oval naan to it.
  • It will get stuck to the tava, because of water.after few mins, turn on the tava to cook the other side in the flame directly
  • The naan will puff up and you will get a perfect tandoori naan.
  • yummy tasty flavorrful garlic naans ready



Softy, spongy,aromatic naan is ready to serve with paneer or any subji!

Plain Naan/ Butter naan

After a long gap, coming to blog. Something or the other makes me lazy. Since I don't cook much these days, I do not have innovative recipes with me.. Slightly will bounce back as soon as I get in full fledged cooking.



For now, here is a simple and tasty tiffin item . Generally yeast is used for this dish, but I didn't use any yeast. It's a very simple procedure and the output is soft and tasty.

Here we go......

Ingredients:

  • Maida/all purpose flour -2 cups

  • Butter

Dates kheer/ Perichampazha payasam

Festive season has all begun and everyone of us would be breaking our heads as to what sweet can be done innovative. Here is one such kheer, it's super healthy as well as tasty!

So put your hands on and try this yummy kheer at your home and send me feedback! My moms recipe..



Ingredients:



  • Milk - 1/2 litre
  • Dates - 1 cup
  • Honey - required
  • Cardamom powder - required
  • Chopped nuts




Method:


  • Grind dates and honey in 
    mixie,
  • Boil the milk  and reduce the quantity into half  the quantity.
  • Allow the milk to cool. Boil the datees and honey misture upto one boil and allow it to cool as well.
  • While it  is warm , mix dates and honey to the warm milk.
  • Add cardamom powder and nuts.
  • Garnish with few chopped dates , so that you get chunky bites while enjoying the kheer.



 Serve warm or chilled according to your taste!

Note: if you want to store the dates syrup, dont add milk..
Grind Dates and honey by adding little water and boil the mixture in low flame to jam consistency and store.
When  needed mix one tsp jam in milk and drink hot or cold...

Mixed Cutlet/ Vegetables Cutlet


August month starts with festivals and continuously there are lots of festivals from there on... Let me share a tasty Cutlet on this month.. This recipe will as well as go for 5 ingredients fix challenge by Lakshmi Vimala.. It's a simple and tasty one.. 





Do try this yummy mouth lingering cutlet at home , and give me feedback..

For the 5 ingredients fix challenge, my ingredients are Cheese, rice, Vegetables, Bread crumbs, garam masala.





Ingredients :


  • Mozarella Cheese- 1cup
  • Steamed Rice - one cup
  • Coriander leaves
  • Assorted veggies ( Carrot, capsicum , corn) - 2 cups
  • Bread crumbs
  • Oil for frying
  • Salt
  • Garam Masala - 2 tsp
  • Chilly powder - 1 tsp





Method:


  • Grate the cheese in  mixing bowl.
  • Add the steamed rice to it
  • Add the chopped veggies and coriander leaves.
  • Add garam masala, chilly powder and salt.
  • Knead it into a dough and make balls.i have used rice as binding agent , instead of potatoes.

  • Place a tava, add oil  , rub both sides on bread crumbs and place the patties on the tava and shallow fry the cutlets.

  • Yummy melting cheese cutlets are ready to munch in this beautiful weather.

How to make Bread crumbs....


Bread Crumbs is made out of dried breads. Its available in all the stores and super market. why cant we make it at home? Its very easy to make at home. Bread crumbs is used for snacks. We use crumbs for making cutlets, fingers, balls, for all the deep frying snacks.. Crumbs are used. Try it at home. Easy to make crumbs here..




Ingredients:


  • Bread slices - 5




Method:


  • Heat a Tava on the gas, place the bread slices on the tava.
  • Dry roast the bread on one side.
  • Turn on the bread to dry roast on the other side.
  • Once done. It will become harder. When it is cooled down.
  • Crumble it into mixer and go for a round.
  • In a minute dry bread crumbs are ready.



Powdered crumbs are ready to use for the snacks for frying.

American corn Cheese balls


Starter today.... One of the yummiest starter here.. Simple and easy o make snack. Rainy days would be awesome with this beautiful snack or starter.Cheesy starter for perfect evening.. It can be a wonderful Party snack as well.




Ingredients:


  • American Corn kernels - 1 Packett
  • Mozarella cheese grated - 1 pack
  • Coriander leaves - chopped
  • G.Chilly - 3 finely chopped
  • Bread Crumbs - 2 tbsp
  • Salt







Method:


  • Grind the corn kernels in the mixer into a coarse mixture.
  • Mix the ground mixture , coriander leaves, chillies, cheese and salt into a mixture.


  • Make small balls from the dough.


  • Roll it on the bread crumbs.
  • Heat oil in a pan and deep fry the balls.




Melting yummy cheesy balls ready. Grab one by one...

Bitter gourd fry/ Sun Fry/Pavakkai varuval


Yummy starter here... Bitter gourd lovers , definitely try this bitter gourd fry. it can be used as side dish for lunch. It can be used as a snack to munch instantly. it can be stored in containers. Very simple procedure and tasty too.. As everyone knows bitter gourd is healthy. Take bitter gourd once a week.  I called it sun fr because my daughter named it by seeing it . She said it looks like sun.. 



Ingredients:



  • Bitter gourd -3
  • Gram flour - required for frying
  • Salt
  • Chilly powder - 2 tsp
  • Tamarind pulp - 1 tsp



Method:


  • Cut the bitter gourd into round or into thin round slices. Remove all the seeds.


  • Marinate bitter gourd with tamarind pulp, salt and chilly powder for 30 mins.
  • Heat oil in a pan, mix the marination with required gram flour and mix nicely.
  • Put one piece by piece and deep fry it.



Enjoy this in all climate with or without rice!
