Fried momos - Vegetable version

Fried momos are similar to the ordinarey momos. Some prefer teamed momos and some prefer fried.. I love the steamed version.. Here is  a simple fried momo recipe..




Ingredients:

  • Carrot - 1 minced
  • Cabbage - 200 gms minced or finely chopped
  • Beans - 100 gms - chopped finely
  • Spring onions - half a bunch finely chopped or minced
  • Garlic cloves - 10 minced
  • Salt
  • Soya sauce - 1 or 1/2 tsp
  • Pepper powder - 1 tsp
  • MSG - optional
  • All purpose flour - 1 cup
  • Canola oil 
  • Water


Method:

  • For the outer cover, knead the all purpose flour , salt , few tsp canola oil and water. Continuously knead it into a soft dough for about 10 mins.

  • For the filling, heat oil in a pan, add the garlic. Once its fried, add the chopped onions.
  • Add all the veggies, soya sauce, salt and pepper powder.

  • Add the spring onions and msg. Stir well.

  • Switch off once all the veggies are boiled and cooked.

  • For momos, take a lemon size balls from the flour and press it like chapathi into thin layer.

  • Using a round cutter, cut it. Place a tsp of the filling.

 

  • Take all the edges and make it like a money bag. press in btween the clusters so that sticks on well. maida will stick immediately. 
  • Prepare rest of the momos.
  • Heat oil in a pan, eep fry fry the momos prepared into golden color.




Enjoy it wth sauce or Mayo, whichever you love to...

Cheese Corn Dosa


Cheese corn dosa is very nurititious and delicious to munch.. It is unccommon from the regular dosa.. We can add as many vegetables as we can.. I have made it using sweet corn, capsicum , onions and cheese..





 Ingredients:


  • Dosa batter
  • Capsicum - 2 chopped
  • Corn kernels - 1 cup
  • Onions - 2 chopped
  • Herbs - Oregano, basil. rosemar and thyme
  • Salt
  • Mozarella Cheese - grated
  • Oil





Method:


  • Heat oil in a kadai, add the chopped onions. Let it fry for sometime..
  • Add the veggies one by one.. Capsicum, corn .
  • Add salt to it.. Allow it to cook for few minutes.
  • Add all the herbs and salt. 
  • This will be ready in quite sometime, as the veggies will be cooked in minutes .
  • Now, Heat the dosa Tava, make the dosa as usual. Place the veggies mixture( how much ever you want the filling to be).
  • Spread the grated cheese over it and close with the lid.
  • Put oil for the dosa. Cook it till the cheese on top is melted.






Mouthwatering, stomach filling dosa is ready. It can be had without any side dish...

Ashoka halwa / Moong dal halwa




Ashoka halwa is a wonderful dessert or sweet to have...it's a traditional sweet made in lot of houses during festive season.It is made of moong dal, an easy recipe tooo. Try this yummy halwa .. 

Ingredients:


  • Moong dal - 1cup
  • Sugar-11/2cup
  • Ghee - 1/4 cup
  • Cardamom powder- 1 tsp
  • Yellow food color - required
  • Milk- 1/4 cup
  • Water


Method:


  • Wash and cook moong dal with water in pressure cooker for 7 whistles, until it becomes like paste.
  • Heat a pan, add sugar and water 1/2 cup and allow it to dissolve and it becomes little sticky.
  • Take the cooked dal and mix it well. If it is not boiled well. Grind them into a paste in mixer.
  • Heat another pan, add few tsps of ghee, add the moong dal paste and fry till the moong dal absorbs the ghee. 
  • Now ad the milk and allow it to boil till no lumps are formed. 
  • Add sugar syrup little by little and stir continuously. Check that there are no lumps.
  • Add the food color and stir well.
  • Stir occasionally till the paste becomes thick.
  • Add ghee little and stir well.
  • When all the excess milk and water is absorbed and it came to the halwa consistency, pour the remaining ghee and mix .
  • Add cardamom powder and mix well.






Yummilicious halwa is ready to dig...

Mutton chops curry


Mutton chops is a super side dish for ragi balls and even for rice. it's made of fresh ground masala which gives the unique aroma to the dish. Chops is cut from the ribs of the mutton. I learnt this yummy recipe from my mother in law. It tastes great..




Ingredients:



  • Mutton chops - 500 gms
  • Oil
  • Water
  • Salt
  • Ginger garlic paste -1/2 tsp
  • Turmeric powder - 1/2 tsp


To grind:


  • Onions shallots - 10-15
  • Tomato -2
  • Coriander leaves -1bunch
  • Green chillies -7
  • Garlic cloves -6
  • Ginger -1"
  • Pepper corns -1tsp
  • Coriander powder -2tsps
  • Coconut -1/4Th
  • Cloves-5
  • Cinnamon -2pieces




Method:


  • Initially boil the mutton chops with turmeric powder and ginger garlic paste. Cook for about 5-6 whistles in the cooker.
  • Grind the to grind ingredients into a fine paste using water.
  • Heat a pan, add oil and add the ground paste.
  • Fry it till the masala is fried well, raw smell vanishes. It should have become little dry .
  • When the masala is well cooked, add the boiled chops, salt Nd required water for the gravy.
  • Close the pan and cook until the masala and chops blend well into a gravy.






Serve it hot with ragi balls or with steamed rice....

Ragi Mudde/ Ragi balls / Finger millet balls

Ragi Mudde, a store house of multi nutrients, has only two ingredients, the Ragi (finger millet) flour and water. A tablespoon of Ragi flour is first mixed with water to make a very thin paste and later added to a thick bottomed vessel containing water on a stove top. As this mixture boils and reaches the brim of the vessel, ragi flour is added which forms a mound on top of boiling water. The flour is allowed to cook in this fashion on medium high flame. Later with the help of a wooden stick (mudde kolu), the flour is beaten to a smooth dough like consistency with no lumps. This hot dough is then rested on low heat before rounding them on a wooden board into tennis sized balls with wet hands. Thus prepared Ragi Rounds are cut into smaller rounds using fingers and swallowed hot dipping the rounds in saaruchutney or gojju. It is not supposed to be chewed. Mudde, by itself, does not have a taste but the accompaniment adds flavor to it. Ragi Mudde is traditionally eaten with saaru made of vegetables or meat. It can also be eaten with yogurt or butter milk.Ragi Mudde-Bassaru is a popular combination among the farming communities in Karnataka. says Wiki.



Its a Karnataka delicacy served generally ith mutton chops curry or fish curry for this mudde. Its easy to prepare and healthy too.



Ingredients:


  • Ragi flour - 2 cups
  • Water - 2 cups
  • Salt - required




Method:


  • Take a heavy botttom vessel, allow it to boil.
  • After it is boiled, add salt to the water and ragi powder. 
  • Do not mix it, put the wooden stick inside the vessel ( allows from over pouring of water while boiling) and close it and cook it for 5 mins in simmer.When it comes to the brim of the vessel , take it from the stove.
  • Mix it well and cook for 5 mins. 
  • Take the mixed and cooked dough and make it into balls.
