Paneer masala Dosa - 3rd Blogiversary from tomo

Wishing all my readers , a very Happy new year !!  I am entering into my 3rd year of blogging this January. I am really happy to a part of blogosphere. Thanks for all your support, encouragement, comments. Do continue to extend your support in future! Wishing all a wonderful 2013.

Paneer masala Dosa is very simple to make.It can lso be served with chapathi/ It was tasty with Dosa . I made this for dinner. Do ty it out.



Ingredients:


  • Paneer - chopped into small pieces
  • Onion - 2 chopped
  • Tomato - 1
  • Chilly powder - 1/2 tsp
  • Coriander powder - 1tsp
  • Garam masala - 1 tsp
  • Coriander leaves
  • Cumin seeds - 1 tsp
  • Oil
  • Water

 
Method:

  • Heat oil in a pan, add cumin seeds. When it splutters. Add the chopped onions. 
  • Fry it till brown. Add the tomatoes and fry.
  • Add all the powders except garam masala. Add little salt and water.  Close and cook for about 5 mins.
  • When it is cooked. Add the chopped Paneer.
  • When it is cooked. Finally add garam masala and coriander leaves.
  • Heat a tava, take the dosa batter and make Dosa. Turn it around and cook the other side of dosa. 
  • Place the cooked masala in between.
 


 Served it with Hot Dosas.

Mushroom Mutter masala


 Mushroom mutter masala is a good side dish for Rotis. Try this simple recipe.

Ingredients:

  • Mushroom - 1 pkt
  • Capsicum - 1 chopped into square pieces
  • Peas - 1 cup soaked
  • Onion - 2 chopped
  • Tomato - 1
  • Chilly powder - 1/2 tsp
  • Coriander powder - 1tsp
  • Garam masala - 1 tsp
  • Coriander leaves
  • Cumin seeds - 1 tsp
  • Oil
  • Water

Method:

  •  Boil the soaked peas.
  • Heat oil in a pan, add cumin seeds. When it splutters. Add the chopped onions. 
  • Fry it till brown. Add the tomatoes and fry.
  • Add all the powders except garam masala. Add little salt and water.  Close and cook for about 5 mins.
  • When it is cooked. Add the mushroom, capsicum, peas and little salt for the vegetables.
  • When it is cooked. Finally add garam masala and coriander leaves.
Super side dish for Chapahi and Rotis.

Chicken fried rice



 Chinese Chicken fried rice is a simple and wonderful one pot meal. I love fried rice anytime  and of course with few meat pieces. Try this simple Chinese fried rice.

Ingredients:


  • Basmati Rice - 1 cup
  • Chicken boneless pieces
  • Capsicum - 1 finely chopped
  • Carrot - 1 grated
  • Spring onions - 1 finely chopped
      • Cabbage - little
  • Pepper powder
  • Salt
  • Garlic - 4-5 finely chopped
  • Ajinomotto - little
  • Soya sauce - 1 tsp
  • Corn flour - few spooons
  • Ginger garlic paste

 
Method:


  • Wash and marinate the chicken pieces with corn flour , salt and ginger garlic paste.
  • Heat oil in a pan, and fry the chicken pieces.
  • Heat oil in a pan, season garlic.
  • Add the onion and vegetables one by one.Fry them.
  • Add soya sauce, little pepper powder.
  • Add the boiled rice, mix well.
  • Sprinkle ajinomotto,salt and pepper powder. Add the fried chicken pieces.
  • Mix them well.
  • Add Spring onions on top. 

 

 Serve hot with Chicken Manchurian !

Sago Kheer/ Javvarisi Payasam

Super dooper kheer it is. It is a tasty dessert I must say. Alltime favorite but I made it for the first time  ever. 



Ingredients:


  • Sago / javvarisi/ Sabudhana - 1 cup 
  • Milk - 3 cups
  • Saffron
  • Cardamom powder
  • Sugar- 1 1/2 cups or acc to sweetness
  • Cashews and raisins
  • Ghee - 1 tsp


Method:


  • Wash and soak sago in water for 5-6 hrs. It would have doubled in size.
  • Boil milk in a vessel. Soak the saffron in little warm milk.
  • Add the soaked sago to the boiled milk and allow it to boil till the sago becomes transparent and becomes like pearl. It automatically starts to float.
  • Add sugar to the milk. You can also use condensed milk.Trust me , I did not add condensed milk but it was too rich in taste.
  • Add the cardamom powder and saffron
  • Heat another small wok, add a tsp of ghee fry the cashews and raisins. 
  • Add it to the Ready kheer.


Relish the wonderful Sago Kheer as dessert !

Rava Semiya Upma


This upma is simple yet delicious. My mom prepares this with extra oil and once the upma is cooked well, keep in simmer for 10 mins. So that the at the bottom of upma ,a dark brown layer is formed. We call it as dosa of upma. It wll be damn tasty. We used to fight for it in our childhood. I guess , most of you will be familiar with it. I have topped the upma with the formed dosa. You can find in the picture above.  Try this simple Upma..

Ingredients:
  • Rava - 1 cup
  • Green Chilly - 2
  • Semiya - 1 cup
  • Onions- 1
  • Curry leaves - little
  • Salt
  • Oil
  • Mustard and urad dal, gram dal
  • Ginger - 1" 
  • Asafodita
Method:

 
  •  Boil water in a vessel.
  • Meanwhile, heat the pan, add oil and pomper mustard and urad dal, gram dal and asafodita.
  • Add Curry leaves, grated ginger and chilly. Fry onions till golden brown.
  • Add roasted rava and roasted semiya. Add the boiled water.
  • Cook it well.
 
 Tips:
 
Add extra oil than normal quantity for an extraoridanry taste.
 
I love o have this with sugar or pickle .You can also serve along with  Coriander coconut chutney.

Paneer in white gravy


 Wonderful side dish i have ever tasted since long. High calorie side dish though.Other than paneer butter masala, this was a good choice for chapathi/ rotis.



Ingredients:

  • Paneer - 100 gms
  • Onion - 2 
  • Cashew - 10
  • Ginger garlic paste - 1 tsp
  • Coriander seeds - 2 tsp
  • Red chilly - 2
  • Green chilly - 2
  • Salt
  • Curd - 1 cup
  • Milk - 1/2 cup
  • Coriander leaves
  • Whole garam masala for tempering ( Cinnamon, cardamom, cloves, bay leaf) 
  • Oil/ Butter
  • Water

Method:

  • Grind onion and cashews into a fine paste.
  • Heat oil and butter, temper the whole garam masala. Add green chillies.
  • Add the onion paste and ginger garlic paste and fry until the raw smell goes. This might take about 10 mins. 
  • Grind the coriander seeds and red chillies together. Add it to the mixture and stir it for 3 mins.
  • Add little waterand mix them. Add curd,milk and salt. bring it to a boil.
  • Finally add the paneer . Stir well.
  • Allow it to boil once.
  • Garnish with chopped coriander leaves.

Serve hot with Rotis/ Chapathis.

Chola Bhatura

Wishing all my readers a very happy christmas... My Christmas celebration was good too.. My hubby bought a log cake fir us and surprise gifts for me and our kid. We had a wonderful christmas lunch @ home. Ofcourse prepared by me.



Today's recipe is Chola Bhature, one of my friends was asking for it for a long time. As such, the poori came out supersoft, but it did not puff up like in restaurants.

try this recipe:



Ingredients:

  • Maida/ All purpose flour - 2 cups
  • Sooji / Rsvs - 2 tsp
  • Buttermilk - to knead
  • Baking soda - 1/2 tsp
  • Salt
  • Oil - 2 tsp
  • Sugar - 1 tsp



Method:

  • Knead all the abive ingredients into a soft dough using buttermilk.
  • Keep it closed with a wet cloth for 2 hrs. Meanwhile you can prepare chole masala for the Bhatura.. 
  • The recipe for Chole is here . I made the same recipe for chole masala.
  • For Bhatura, Heat oil in a wide pan, take orange size ball from the dough and make a little thicker chapathi and deep fry on bothe sides. For puffing up, press the poori with the ladle in the centre.




Serve it hot with chopped onions and lemon wedges.

Mushroom masala Dosa

Mushroom masala dosa is a must have dish. It was too good I should say ! I made it a little spicier. Omg, I could still feel the taste of it. Try this out soon.



Ingredients:

  • Onion -2 finely chopped
  • Tomato - 1 big finely chopped
  • Garlic - 4 cloves crushed
  • Ginger - little crushed
  • Red chilly powder - 1 tsp
  • Coriander powder - 2 tsp
  • Garam masala - 1/2 - 1 tsp
  • Coriander leaves - chopped - 1
  • Fennel seeds - 1 tsp
  • Turmeric powder - 1/4 tsp

  • Dosa batter 



Method:

  • In a bowl, add little rice flour and the chopped mushrooms. Rinse it under water.
  • Heat oil in a pan, add the fennel seeds. When it splutters. Add the chopped onions. 
  • Fry it till brown. Add the crushed ginger and garlic. fry for 2 mins. Add the tomatoes.
  • Add all the powders except garam masala. Add little salt and water.Close and cook for about 5 mins.
  • When it is cooked. Add the mushroom and little salt for the mushrooms.
  • When it is cooked. Finally add garam masala and coriander leaves.
  • Heat a tava, take the dosa batter and make Dosa. Turn it around and cook the other side of dosa. 
  • Place the cooked masala in between.


 


Serve it hot with Chutney !

Cranberry Almond cake - eggless

Christmas without cake. I made this simple eggless cake with a combination of Cranberry and almonds. It is one of my favorite juices. Its a natural drink and of course its an antioxidant. Almonds is a healthiest of all the nuts.cake for this christmas.Try this healthy  coming to the recipe:



 

Ingredients:

  • Almonds - 10-15
  • All purpose flour 1 1/2 cup
  • Baking powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Salt - a pinch
  • Cranberry juice - 1 1/2 cup
  • Butter - 1 cup ( melted)
  • Powder sugar - 1 cup
 

Method:

  •  Remove the gasket and the weight from the cooker lid. You can also use any other plate instead of cooker lid, to close the cooker.
  • Place the cooker plate at the bottom of the cooker and preheat the cooker for 10 mins on high. Meanwhile sieve all the dry ingredients together. Grind the almonds coarsely with the skin. Mix it.
  • Add the melted butter to the dry ingredients.
  • Add the cranberry juice and mix the flour into watery mixture.
  • Take a aluminium pan or even aluminium foil cups or cake moulds.
  • Apply butter on the base and sides of the pan.
  • Add all purpose flour and dust it around the vessel.
  • Pour the Batter into the vessel or pan.
  • Reduce the flame into low flame and place the vessel inside the preheated cooker and allow it to bake for 30-35 mins.
  • Insert a knife or a tooth pick. If nothing is stuck on it, its fully done.




 Relish the supersoft cake!
