Suffed Brinjal is a yummy dish to be served with rice as well as roti. Its a dry side dish. It goes well with sambar rice, curd rice.

Ingredients:
- Brinjals - 10 small size
- Coriander curry podi - 2 tsp
- Sambar powder - 2-3 tsp
- Turmeric powder - 1/4 tsp
- Asafoedita
- Salt
- Curry leaves
- Oil
- Mustard seeds
- Tamarind juice - 4-5 tsp
Method:
- Wash and remove the stem of brinjal.
- Slit them into 4 parts upto 3/4th without breaking the brinjal.
- Mix coriander curry podi , sambar powder, turmeric powder,salt and asafoedita.
- add tamarind juice to it and make it into a paste.
- Split the slit brinjal and apply it in between and keep it aside for some time.
- Heat oil in a pan, splutter mustard seeds and curry leaves.
- Put the brinjals to it and cook in simmer for 10 mins. Occasionally turn it around and stir well.
- Dont allow it for too long, it may burn as we dont add water to it.
- Wonderful stuffed brinjal is ready.
