Fish Dum Biryani/ Fish Biryani


Back with a bang, Long time since i tried a different biryani recipe. I wanted to make fish biryani for the  past two years, Just got chance n guts ti try it, The procedure is little lengthy. Worth a try. Biryani itself is a yummy dish, made it little healthy with fish.




Ingredients:

For marination:

  • Fish slices -  5-6
  • Lemon juice - 1
  • Turmeric powder
  • Chilly powder - 5 tsp
  • Salt to taste


Method:
  • Mix all the above ingredients for an hour.
  • Heat oil in a pan, Shallow fry the fishes and keep it aside.




For Rice :
  • Basmathi Rice - 2 cups ( Soaked for 20 mins)
  • Water - 4 cups
  • Oil - 1 tbsp
  • Salt - as required (for Rice alone)
  • Cardamom pods - 2 
  • Bay leaf - 1
  •  
Method:

  • Cook the rice till it is 85 % done. Drain it and keep it aside.





For gravy:

  • For Gravy:
    • Fish fried oil 
    • Cloves - 3-4
    • Cinnamon - 2
    • Cardamom - 2-3
    • Bay leaf - 2
    • Green chilly - 2
    • Onions - 2
    • Tomatoes - 2
    • Chilly powder - 1 tsp
    • Coriander powder - 2 tsp
    • Salt - only for the gravy
    • Curd - 1/2 cup
    • Water - little
    • Ginger garlic paste - 2 tsp
    • Coriander leaves

Method:

  • Heat oil in a pan, Add the onions and fry them for 15 mnins till it becomes dark brown for garnish.
  • Take the fried onions and keep it aside.
  • Heat oil in a heavy bottomed vessel. Add all the spices one by one.
  • Add green chilly and onions. Fry them well.
  • Add ginger garlic paste.Cook till raw smell disappears.
  • Add tomatoes.cook well.
  • Add Chilly powder, coriander powder and salt.
  • Add curd, mint leaves and coriander leaves and allow it to boil. 
  • To the fried fish, add little gravy and keep the remaining gravy.
  • Switch it on when the mixture is done.
  • In a pressure cooker, add the masala in the bottom, add little rice at the top of it. 

  • Add the fish masala on top of it.
  • Add the remaining rice on top of it and spread .
  • Sprinkle and garnish with the fried onions , coriander leaves and cashews.( below Picture)


Stir it from below before serving.

chicken biryani - a flavorful one!


This chicken biryani is a flavorful biryani , made with the freshly ground masala.. A super flavor to the chicken biryani . Do try the variation.



Ingredients:


  • Basmati rice - 1 cup
  • Chicken -250 gms
  • Coconut milk - 1 cup
  • Water - 1 cup
  • Salt
  • Ghee
  • Oil
  • Onion - 1 cut into julienne 
  • Cinnamon -1"
  • Cloves - 2

To grind:

  • Green chilly -3
  • Coriander leaves - one handful
  • Cinnamon - 1"
  • Cloves - 4
  • Cardamom - 3
  • Ginger garlic paste - 1 1/2 tsp

Method:

  • Heat the pressure cooker,add oil and ghee, season cinnamon,cloves.
  • Add onions and the chicken. Fry well.
  • Add the ground paste,salt. Sauté till the raw smell and the paste is fried well.
  • Add rice and lastly coconut milk and water.
  • Switch off after 2'whistles. Aromatic flavorful biryani would be ready.


  • Relish the yummy biryani! I served it with onion Raitha and chicken chukka!

Chettinad Chicken Biryani

 How many of you mouth water when you hear the word Biryani?? Definitely I do.. one of the most tastiest food. a perfect one-pot meal. There are so many varieties of biryani. Starting from regional, religion, etc.  My alltime favorite is mutton biryani... i have few restaurants in chennai, where I prefer to eat biryani ,everytime I visit.

Chicken biryani is currently the more popular biryani, being easy on the stomach and also because of wider availability. It usually comes with a boiled egg too.

Today's Special is Chicken Biryani. I wanted to try out different recipe. So tried this chettinad one.. Do try it out at home.



Ingredients:

For Chicken marination:
 
  •  Chicken - 500 gms
  • Ginger garlic paste - 1 1/2 tsp
  • Turmeric powder - 1 tsp
  • Chilly powder - 1 tsp
  • Coriander powder - 2 tsp

For coriander - mint paste:

  • Coriander - 1 cup
  • Mint - 1 cup
  • Green chillies - 2

For Biryani on thw whole:

  • Oil
  • Cardamom -3
  • Cinnamon - 1"
  • Cloves - 4-5
  • Bay leaf - 2
  • Onion - 1 big sliced
  • Tomato -2 medium chopped
  • Salt
  • Basmathi rice - 2 cups washed and soaked
  • Water - 4 cups
 

Method:

  • Heat oil in a pressure cooker, add the whole spices. add the onions. Fry till golden brown.
  • Add the ground coriander mint paste, Stir well.
  • Add the tomatoes. Fry till they become mushy. 
  • Add the marinated chicken. Saute well for 5 mins or till oil releases.
  • Add rice, salt and water. Mix well.
  • after 2 -3 whistles , switch it off. Immediately as soon as the pressure releases , open the cooker and stir well.

Mouthwatering Chettinad Biryani  with Chetttinad Kurma.... Lovely !

Channa pulao

Channa Pulao is very nutritious. its a very simple dish to make..





Ingredients:

  • Channa - 1 cup
  • Basmathi Rice - 1 cup
  • Onion -1 big
  • Tomato - 2
  • Green Chilly - 3
  • Curd - 3 tsp
  • Ginger garlic paste - 11/2 tsp
  • Cloves- 4
  • Cinnamon - 2 - 3 pieces
  • Cardamom - 4
  • Bay leaf - 2
  • Chilly powder - 1 1/2 tsp
  • Salt to taste
  • Water - 2 cups
  • Oil

Method:

  • Soak the channa overnight.
  • In a Cooker , add oil , temper all the spices.
  • Add green chillies, onion together and fry it till brown.
  • Add ginger garlic paste. Then tomatoes. Stir well.
  • Add Chilly powder and channa.
  • Later on add curd and stir it for about 10 mins
  • Add salt and rice.
  • Keep for three whistles.
  • Garnish with Coriander leaves.

Prawn Biryani/ Shrimp Biryani



Shrimp Biryani is today's special. This recipe may seem to be lengthier. It was damn tasty. Everyone of you must try it. I loved it thoroughly.

Ingredients:

For marination:

  • Prawns -  500 gms
  • Lemon juice - 1
  • Turmeric powder
  • Ginger garlic paste - 1 tsp
  • Salt
  • Curd/ Yoghurt - 1 cup

Method:
  • Mix all the above ingredients for an hour.

For Rice :
  • Basmathi Rice - 2 cups ( Soaked for 20 mins)
  • Water - 4 cups
  • Oil - 1 tbsp
  • Salt - as required (for Rice alone)

  • Fennel powder - 2 tsp
  • Cinnamon powder- 1/2 tsp
  • Cumin powder  - 2 tsp
  • Mint leaves - one handful
  • Coriander leaves - one handful
  • Green Chilly - 4 chopped
  • Coriander powder - 2 tbsp
  • Cloves - 2
  • Red chilly - 2
  • Poppy seeds - 1 tbsp
  • Cardamom seeds - 5 pods
  • Peppercorns - 10


Method to grind:

  • First start from leaves, add mint leaves and coriander leaves.
  • Add green chillies, break the red chilllies and add to it. Grind it.
  • Add all the powders and seeds to it.grind the mixture.
  • A wonderful minced masala is ready.

For Biryani:

  • Onions - 3 big 
  • Tomatoes - 2
  • Oil
  • yellow Colour - 2 tsp( mixed in little water.

Method:

  • Heat oil in a pan, Add the onions and fry them for 15 mnins till it becomes dark brown.
  • Take little fried onions and keep it aside.
  • Add little more oil to the left onion in the pan. Add tomatoes to it.
  • after the tomatoes become mushy, add the minced masala to it. Stir it well.
  • add the prawns marinated into the pan. Cook till the prawns are cooked well.
  • Switch it on when the mixtur is done.
  • In an empty vessel, add little rice at the bottom. Add the Prawn masala on top of it.
  • Add the remaining rice on top of it and spread .
  • Add little yellow colour on top of the rice and sprinkle and garnish with the fried onions.( below Picture)

Stir it from below before serving.

Mastan Mutton Biryani

Hi all,

Happy Sunday !! Sunday reminds of Biryani... Biryani is always special. I guess its all time favorite for all.there are too many varieties of biryani. This Biryani is indeed very tasty and simple too.. The original recipe is from Chef Jacob. I loved the recipe and tried . You also can try it.

Ingredients:


  • Mutton - 500 gms
  • Basmathi rice - 2 cups
  • Bay leaf - 2
  • Ramba leaves - 2
  • Cinnamon - 1"
  • Elachi - 4
  • Cloves - 4
  • Tomato - 1
  • Ginger garlic paste - 1 1/2 tsp
  • Green chilly - 7
  • Maratti moggu - 2-3
  • Mint leaves - 1 cup
  • Coriander leaves- 1 cup
  • Ghee - 4 tbsp
  • Salt



 Method:

  • Heat ghee in a pressure cooker. Add all the spices.Add whole green chillies ( dont chopped or cut it.).
  • Add ginger garlic paste.Add the Mutton to it and fry well.Fry till it turns pink.
  • Add ramba leaves and salt.
  • Add chopped mint leaves and coriander leaves.
  • Add little water for the mutton to boil.
  • After the mutton is boiled , add the soaked rice.
  • Add remaining water required for rice.
  • Add the chopped tomato.
  • Add the remaining salt.Allow it to cook for 3 whistles.
Yummy Biryani ready.


Verdict from my hubby: Authentic biryani and tastes too good.

Idiyappam Biryani - Vegetable



Ingredients:
  • Idiyappam - 10
  • Cinnamon - 1 or 2
  • Cardamom - 2
  • Cloves - 3
  • Potato - 2 boiled and chopped
  • Cauliflower - 1 cup
  • Ginger and Garlic paste -1 tsp
  • Onion chopped - 1 big
  • Tomato chopped - 2 small
  • Oil - 3 tsp
  • Carrot- 1 grated
  • Red chilli powder - 1 tsp
  • Coriander powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Coriander leaves
  • Mint leaves
  • Salt

Method:
  • Heat 2 tsp of oil in a pan , add cinnamon,cloves,cardamom to it and saute it well. Then add the onions in it and saute it for 2 mins then add the chopped tomatoes to it and mix it well.
  • add the vegetables one by one and saute well.
  • Add the red chilli powder,turmeric powder,coriander powder and salt to it.
  • Add the chopped coriander leaves and mint leaves to it. stir well.
  • When the veggies are cooked well and they are blended together as a masala, add the shreded idiyappam to this .Mix it well and garnish it with Coriander leaves.
Note: Minced Chicken can be added in place of vegetables.

Chicken Biryani - Mughalai Style- Ramzan Spl

A Regal dish, Mughalai Biryani is fit for a king and was probably eaten by many too!. This makes the perfect one -dish meal for when you have company.


Ingredients:

  • Chicken - 500 gms
  • Basmathi Rice - 2 Cups
  • Onion - 2
  • Tomato - 2
  • Green Chilly - 3
  • Curd - 3 tsp
  • Ginger garlic paste - 2 tsp
  • Cloves- 4
  • Cinnamon - 2 - 3 pieces
  • Cardamom - 4
  • Bay leaf - 2
  • Chilly powder - 1 1/2 tsp
  • Coriander powder - 3 tsp
  • Salt to taste
  • Water - 5 cups
  • Oil
  • Coriander leaves - one handful
  • Mint leaves - one handful

Method:

  • Wash Chicken and keep it seperately.
  • In a Cooker , add oil , temper all the spices.
  • Add green chillies, onion together and fry it till brown.
  • Add ginger garlic paste. Then tomatoes. Stir well.
  • Add Chilly powder and Coriander powder.
  • Later on add the chicken to the mixture,add curd and stir it for about 10 mins.
  • Add coriander leaves and mint leaves.
  • Add salt and rice.
  • Keep for three whistles.
  • Garnish with Coriander leaves.

Bathkal Biryani - Mangalore Spl

Ingredients:

For rice:

  • Basmathi Rice - 2 cups
  • Cloves - 2
  • Bay leaf - 1
  • Cinnamon - 1
  • Water - 4 cups
  • Salt - 1/2 the quantity required for the rice alone

Method:

  • Wash rice and soak i 4 cups of water for 1o mins.
  • Add the spices and cook the rice for 3 whistles.

For Gravy:

  • Chicken - 200 gms
  • Prawns - 100 gms
  • Cloves - 3-4
  • Cinnamon - 2
  • Cardamom - 2-3
  • Bay leaf - 2
  • Green chilly - 2
  • Onions - 2
  • Tomatoes - 2
  • Chilly powder - 1 tsp
  • Coriander powder - 2 tsp
  • Salt - only for the gravy
  • Curd - 1/2 cup
  • Water - little
  • Ginger garlic paste - 2 tsp
  • Oil
  • Coriander leaves

Method:
  • Heat oil in a heavy bottomed vessel. Add all the spices one by one.
  • Add green chilly and onions. Fry them well.
  • Add ginger garlic paste.Cook till raw smell disappears.
  • Add tomatoes.cook well.
  • Add Chilly powder, coriander powder and salt.
  • Add chicken first and pour little water.Add curd and allow the chicken to boil.
  • Add prawns after sometime and cook for sometime.
  • Finally add the cooked rice. Garnish with coriander leaves and keep it closed for sometime.

Mix well - Wonderful Biryani is ready.

Vaniyambadi Chicken biryani


Ingredients:
  • Chicken - 500 gms
  • Basmathi Rice - 2 Cups
  • Onion - 2
  • Tomato - 2
  • Green Chilly - 3
  • Curd - 3 tsp
  • Ginger garlic paste - 2 tsp
  • Cloves- 4
  • Cinnamon - 2 - 3 pieces
  • Cardamom - 4

  • Bay leaf - 2
  • Chilly powder - 1 1/2 tsp
  • Lemon - 1
  • Salt to taste
  • Water - 4 cups
  • Oil
  • Food colour optional . Saffron soaked in water

Method:

  • Marinate chicken with curd, lemon, ginger garlic paste and little salt.

  • In a Cooker , add oil , temper all the spices.
  • Add green chillies, onion together and fry it till brown.
  • Add ginger garlic paste. Then tomatoes. Stir well.
  • Add Chilly powder.
  • Later on add the marinated chicken stir it for about 10 mins.
  • Add salt and rice.
  • Keep for three whistles.
  • Add food colour / saffron, Stir well
  • Garnish with Coriander leaves.
