Vazhaipoo Vadai / Banana flower fritters



The banana flower is the flower of the banana plant and is native to the Andes mountains of Colombia.. The banana flower is a large, dark purple-red blossom that grows from the end of a bunch of bananas. If you open the inside, you can see small flowers that would turn into banana. The flavour is a little starchy and bitter, and is normally eaten as a complement to a dish.



Vadai is a yummy sreet food. There are a lot of varieties in Vadai. starting from medhu vadai, masal vadai, keerai vadai, thayir vadai, sambar vadai, aama vadai, vazhaipoo vadai is one such vadai. Its very crispy and yummy. As we all use every part of the plantain tree. We also make use of flower, stem, vegetable and fruits. Banana flower is rich in vitamin A and C.


Ingredients:


  • Vazhai poo - 1
  • Gram dal - 1 cup
  • Salt
  • Green chillies - 2
  • Mint - 4-5 leaves
  • Fennel seeds / Saunph - 2 tsp
  • Curry leaves
  • Water
  • Oil
  • Onion -  1 finely chopped
  • Buttermilk - one bowl

Method:

  • Wash and peel the banana flower. Take the flower in hand and squeeze a little, in every flower there will be a stem that pops out with a bulb on head. Remove it.
  • Chop the banana flower into fine pieces and add it to the buttermilk.
  • Soak gram dal for an hour.
  • Before grinding taking a handful of dal aside.
  • Grind dal,mint leaves,fennel seeds,curry leaves,water,salt.Grind coarsely.
  • strain and add the banana flower and pulse it once using mixer.
  • Add chopped onion, green chillies, little curry leaves, dal which was kept aside. Mix the batter nicely.
  • Heat oil in a pan, take little  batter,slightly flatten it and fry the patties.

Crunchy Vazhaipoo vadais ready to munch! Awesome side dish for all the rice varieties.

Sweet Corn vadai

Vadai is always made on the special occasion. For this Diwali, I made sweet corn vadai. I was tired and bored of making medhu vadai or masal vadai. So just thought of trying this vadai using sweet corn. It was a super dooper hit.



 Ingredients:

  • Gram dal - 1 cup
  • Sweet corn Kernels - 1 cup
  • Salt
  • Green chillies - 2
  • Mint - 4-5 leaves
  • Fennel seeds / Saunph - 2 tsp
  • Curry leaves
  • Water
  • Oil

Method:

  • Soak gram dal for an hour.
  • Before grinding, take a handful of dal and sweet corn and keep aside.
  • Grind dal, sweet corn kernelsmint leaves,fennel seeds,curry leaves,salt.Grind coarsely.
  • Add green chillies, little curry leaves
  • Add the sweet corn and dal which was kept aside.
  • Heat oil in a pan, take small balls from the vadai mixture and place it on your palm and slightly flatten it and place it in the oil and fry.
  • Fry them on medium flame.

Tasty and crunchy vadai ready.

Cabbage Vadai

Cabbage Vadai is also my mom's special. Every time I make vadai, I miss my mom. She is no.1 in it. Hope you guys like it.


Ingredients:

  • Urad dal - 1 cup
  • Salt
  • Water
  • Curry leaves
  • Cabbage Chopped - 1
  • Green chilly - 2
  • Oil

Method:

  • Soak urad dal for an hour. Grind it using little water.Make it fluffy.
  • Add the chopped cabbage,green chillies, salt and curry leaves.
  • Heat oil in a pan, make yummy vadas out of the flour.
  • Crispy vadas Ready .

Thavala Vadai

Ingredients:

  • 1/2 cup raw rice
  • 1/2 cup toor dal
  • 1/2 cup channa dal
  • 1/2 cup urad dal
  • 3 tsp moong dal
  • 4 red chillies
  • 2 green chillies
  • 3 tsp grated coconut
  • 2 sprigs curry leaves
  • 4 tsp chopped coriander leaves
  • oil for deep frying
  • 2 tsp Ginger grated


Method:


  • Soak raw rice, toor dal and channa dal, both the chillies together for 4 hours.
  • Drain, grind them together to a coarse batter like adai, without adding water. Soak urad dal separately for 4 hrs.
  • Drain and grind urad dal to a smooth batter without adding water.
  • Soak moongdal for
  • Mix the two batters, moong dal (whole) , salt, hing.
  • Add coconut pieces, coriander leaves to the batter.
  • Add curry leaves, coriander leaves, grated coconut, ginger grated and salt.
  • Take a small ball of the batter and flatten it in hot oil. Deep fry till golden brown on both sides.

Serve with sauce.

Sago Vada / Sabudhana Vada

Ingredients:

  • 3 medium potato boiled, peeled and mashed
  • 1 cup sabudana (sago)
  • Water (to soak sabudana)
  • 1 medium onion (finely chopped)
  • 3-4 green chillies (finely chopped)
  • 1 tbsp ginger (finely chopped/minced)
  • Curry leaves ( tear or finely chopped)
  • Vegetable/canola/sunflower oil (to fry around 2 cups)
Method:

  • Soak the sabudana (sago) in water 3-4 hours.
  • It will puff up and become translucent. Drain excess water and mix the sabudana with all he other ingredients and form a dough (more like a chunky paste) except oil.
  • Add salt to taste. Divide the sago mixture into equal-size
  • d balls and flatten slightly to form patties.
  • Heat oil in a pan/kadai and fry the patties until golden brown. Drain on tissues and serve with Sauce.

Green peas vada


Ingredients:

  • Green peas - 2 cups
  • Onion - 1 finely chopped
  • Green chillies - 1 finely chopped
  • Coriander leaves
  • Curry leaves
  • Water
  • Oil

Method:

  • Soak the peas overnight.
  • Grind it coarsely.Mix onion, chilly,curry leaves,coriander leaves to the mixture.

  • Mix well.
  • Heat oil in a pan, take the mixture and make it little flatter and fry it.

Crispy vadas ready.

Masal Vadai

Ingredients:

  • Oil

  • Heat oil in a pan, take little flour,slightly flatten it and fry.

Crispy masal vada ready.

Medhu vada

My mom's yet another special dish which tastes really yummy. I dont like other vadas except for my mom;'s preparation. I bet no one can match her taste

Ingredients:


  • Urad dal - 1 cup
  • Salt
  • Water
  • Curry leaves
  • Onions Chopped - 1
  • Green chilly - 2
  • Oil

Method:

  • Soak urad dal for half an hour. Grind it using little water.Make it fluffy.
  • Add the chopped onions,green chillies, salt and curry leaves.
  • Heat oil in a pan, make yummy vadas out of the flour.

It can be converted into rasa vada,sambar vada,curd vada!
