Kollu podi / horse gram podi

Horse gram can best be described as a reddish brown legume which is packed with a number of health benefits. It can help with a number of health problems as it is a grain which contains a good and rich amount of vitamins, proteins, and iron. In addition to weight loss, it helps in reduction of extra fat from the body. Horse gram is rich in B-complex vitamin and proteins. It helps in purifying menstruation and cures and prevents arthritis. The presence of a good amount of dietary fibre in the gram helps balance sugar glucose and blood pressure levels.


Horse gram seeds possess a rich content of polyphenols, flavonoids and proteins, the main anti-oxidants, which are mostly present in fruits. Therefore, a few of the main benefits which are associated with consuming horse gram are:

  • Horse gram can be mixed with asafoetida, dry ginger and a pinch of ‘veed salt’ to help treat stomach pain to provide immediate relief.
  • Incorporating horse gram in diet will help relieve pain from dry piles.
  • For women, intake of horse gram helps in purifying during the menstrual cycle.
  • Horse gram made into a semi-liquid solution will help reduce and prevent gas and flatulence.

Horse gram is very easy and tasty like our any other legume. I have made kollu I podi which is used to mix in rice and eat along with coconut oil or ghee. Gun powder with horse gram is absolutely flavourful and tasteful. It's healthy too.



Ingredients :

  • Toor dal - 1/4 cup
  • Kollu - 1/2 cup
  • Gram dal - 1/2 cup
  • Pepper - 2 tsp
  • Red chilly - 5-6
  • Salt
  • Asafoedit

Method:

  • In a pan, dry roast each ingredient separately.
  • Cool them and grind it little coarsely.
  • Store in refrigeration if you are grinding a larger quantity.



Goes well with rice and coconut oil.

Vazhaikkai podi

Vazhaikkai podi is a recipe which I learnt from Mr.Venkatesh Bhat from his program Samyal Samayal in Vijay TV, It was so appetizing and a different recipe using raw banana . We can also make this powder and store it for 2-3 days. Definitely it gives a different taste . It can be kept for lunch box . I served it with suttapplam. To give it a try and write to me.






Ingredients:
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Asafoedita- 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Curry leaves 
  • Coriander seeds - 1 tbsp
  • Bengal gram - 1 tbsp
  • Urad dal - 1 tbsp
  • Toor dal - 1 1/4 tsp
  • Red chilly - 7
  • Salt
  • Oil / ghee
  • Raw banana - 1

Method:

  • Heat a pan, dry roast , bengal gram, urad dal 1 tbsp,toor dal,red chilly,coriander seeds and keep it aside. Grind it into a coarse powder with salt..
  • Pressure cook the banana with little turmeric powder and salt for 3 whistles and peel the skin. shred the raw banana into small crumbs and keep it aside.
  • Heat the pan, add ghee ,splutter mustard seeds, urad dal, curry leaves and asafoedita.
  • In a bowl keep the cooked rice and add 2 tsp of ghee, add the shredded raw banana, tempered mustard seeds mixture and the coarsely ground masala powder to it.
  • Mix well and keep it for sometime. 


Relish it with chips or suttappalam or any fried dishes! Yummy it is!

How to make Bread crumbs....


Bread Crumbs is made out of dried breads. Its available in all the stores and super market. why cant we make it at home? Its very easy to make at home. Bread crumbs is used for snacks. We use crumbs for making cutlets, fingers, balls, for all the deep frying snacks.. Crumbs are used. Try it at home. Easy to make crumbs here..




Ingredients:


  • Bread slices - 5




Method:


  • Heat a Tava on the gas, place the bread slices on the tava.
  • Dry roast the bread on one side.
  • Turn on the bread to dry roast on the other side.
  • Once done. It will become harder. When it is cooled down.
  • Crumble it into mixer and go for a round.
  • In a minute dry bread crumbs are ready.



Powdered crumbs are ready to use for the snacks for frying.

Milagu kuzhambu Podi


My Grandma's recipe.......




Ingredients:

  • Tamarind - 1 lemon size
  • Fresh Curry leaves - one handful
  • Coriander seeds - 3 tbsp
  • Pepper - 3 tbsp
  • Red chilly - 4-5
  • Salt
  • Hing - small piece
  • Toor dal - 2 tbsp
  • Oil - little
Method:
  • Heat little oil in a pan, fry Hing.
  • Add coriander seeds , pepper, toor dal. Fry them.
  • Add red chilly and roast as well.
  • Add tamarind without seed, turmeric powder and salt. Fry them.
  • Add curry leaves and fry them till color changes.
  • Allow it to cool and grind them coarsely.
  • Store it in a container and refrigerate it.
Whenever needed can make instant kuzhambu with the podi.

To make into a kuzhambu:

Ingredients:

  • Oil
  • Cumin seeds - 1 tsp
  • Milagu kuzhambu podi - 3 tbsp
  • Water
  • Mustard seeds - 1/2 tsp
Method:
  • Heat oil in a pan, Add the cumin seeds and mustard seeds.
  • Mix the milagu kuzhambu podi in water and add to the oil.
  • Allow it to boil till oil rises.
Yummy with steamed rice.

Idly podi



Ingredients:

  • Urad dal - 1 cup
  • Gram dal - 3/4 dal
  • Asafoedita - 1/4 tsp
  • Red chilly - 25-30
  • Salt
  • Oil


Method:

  • Fry all the ingredients separately in oil.
  • Grind it coarsely.

Coriander curry podi

 This curry podi is prepared by my grandma... We use it to give flavor to the poriyal/ stir fries. It gives damn good flavor to the curry. It can be stored in a container for a long time.

Ingredients:

  • Coriander seeds - 1 cup
  • Gram dal - 2 tbsp
  • Red chilly - 4
  • Asafoedita - 1/4 tsp
  • Salt

Method:

  • Dry roast it in a pan.
  • allow it to cool down and grind it coarsely.

Gun powder

Ingredients:

  • Roasted gram dal
  • Red chilly
  • Garlic
  • Curry leaves
  • Salt

Method :

Grind all the ingredients.

Paruppu podi


Yummy instant mix powder from my grandma's recipe:


Ingredients:

  • Toor dal - 1/2 cup
  • Gram dal - 1/4 cup
  • Pepper - 2 tsp
  • Red chilly - 5-6
  • Salt
  • Asafoedita

Sambar podi

Ingredients:

  • Red chilly - 250 gms
  • Coriander seeds - 500 gms
  • Pepper - 2 tbsp
  • Gram dal - 2 tbsp
  • manjal kizhangu - 5

Method:

Dry everything in sun and grind it.
