Chicken Stirfry



Chicken starter is alltime favorite for most of us. This recipe is a simple and tasty starter. It can also be used as a side dish for rice varities. It can also be stuffed inside parathas as wraps. I got the idea of this recipe in a TV show with few variations. Chicken lovers will definitely relish this. My blog was empty these many days without my posts. Hee come this recipe to decorate my blog. Enjoy and have  fun!




Ingredients:


  • Boneless chicken - 250 gms
  • Lemon juice - one lemon
  • Egg white - 1
  • Garlic chopped finely - 10 cloves
  • Curry leaves - 2 strips
  • Salt
  • Red chilly paste - 3 tsp
  • Coriander powder - 2 tsp
  • Coriander leaves - chopped for garnish





Method:


  • Wash and chop the chicken into small cubes.
  • Take a vessel, add the chopped  chicken. Add the rest of the above ingredients to the chicken except coriander leaves. Marinate and leave it for 30 mins.
  • Heat a pan, add some oil and add the marinated chicken and cook on low flame.
  • Keep stirring often. Close and cook it till the chicken is boiled. saute it nicely.
  • Ad oil if necessary. stir it occasionally till the chicken and the masala combines well with one another.
  • Finally add the coriander leaves.



Tasty smoky chicken stir fry is ready as a starter.

chicken biryani - a flavorful one!


This chicken biryani is a flavorful biryani , made with the freshly ground masala.. A super flavor to the chicken biryani . Do try the variation.



Ingredients:


  • Basmati rice - 1 cup
  • Chicken -250 gms
  • Coconut milk - 1 cup
  • Water - 1 cup
  • Salt
  • Ghee
  • Oil
  • Onion - 1 cut into julienne 
  • Cinnamon -1"
  • Cloves - 2

To grind:

  • Green chilly -3
  • Coriander leaves - one handful
  • Cinnamon - 1"
  • Cloves - 4
  • Cardamom - 3
  • Ginger garlic paste - 1 1/2 tsp

Method:

  • Heat the pressure cooker,add oil and ghee, season cinnamon,cloves.
  • Add onions and the chicken. Fry well.
  • Add the ground paste,salt. Sauté till the raw smell and the paste is fried well.
  • Add rice and lastly coconut milk and water.
  • Switch off after 2'whistles. Aromatic flavorful biryani would be ready.


  • Relish the yummy biryani! I served it with onion Raitha and chicken chukka!

Chilly Chicken




Chilly Chicken is a super yummy dish. A good touch of chinese cuisine. Its really easy to make and relish its taste. Happy Chinese New year to one and all with this Chinese recipe.


Ingredients:

For marination:

  • Chicken - 400 gms boneless
  • Corn flour - 3 tbsp
  • Maida - 1 tsp
  • Salt
  • Ginger garlic paste - 1/2 tsp

Other ingredients:

  • Capsicum - 1
  • Spring onion - one bunch chopped
  • Garlic chopped - 1 tbsp
  • Ginger garlic paste - 1 tsp
  • Chilli garlic sauce - 1 tbsp
  • Tomato Sauce - 2 tbsp
  • Green chilly - 2
  • Chilly powder - 1 tsp
  • Salt
  • Water

Method:
  • Marinate the Chicken for half hour 
  • Heat oil in apn and fry it on medium flame till it is half cooked. Do not fry till golden brown. Keep it aside.
  • For masala, heat oil in a pan, add chopped garlic and green chilly. Saute well.
  •  Add ginger garlic paste. Fry till raw smell vanishes.
  • Add the capsicum and spring onions. Add chilly garlic sauce, tomato sauce, chilly powder and salt. Mix them well.
  • When the capsicum is cooked, add the fried Chicken and saute well.
  • Finally garnish with spring onions.

Chicken Kothu Parotta

One of our facorite dishes is Kothu Parotta.. try this simple and yummy chicken kothu parotta.



Ingredients:

  • Parotta - 5
  • Chicken kurma  with pieces  - one cup kurma
  • Egg - 2
  • Curry leaves
  • Coriander leaves
  • Fennel seeds - 1 tsp
  • Garam masala
  • Salt
  • Onion - 1 cut lengthwise
  • Chilly - 2


Method:

  • Heat oil in a pan, Splutter fennel seeds and curry leaves.
  • Add onions and chillies and saute them well.
  • Add the eggs to it. Add some salt.
  • When the eggs are boiled, add the kurma t it. Make the chicken pieces into small pieces like shredded pieces.
  • Add it to the mixture. Stir well.
  • Tear the parotta into small pieces. add it to the mixture. Keep stirring it.
  • Add garam masala and coriander leaves. 



 Super yummy Kothu Parotta is ready.

Kheema Noodles using Maggi

Such a wonderful dish to taste. If you have not tried it , try it today. Feel like having it anytime. I just trie the other day with chicken kheema. I liked it so much. 


Here it is:

Ingredients:


  • Noodles - 3 pkts
  • Chicken kheema - 250 gms
  • Onion - 1 chopped
  • Oil
  • Water
  • Tastemakers - 3 ( I used curry flavour)
  • Salt very little
  • Ginger garlic paste - 1/2 tsp


Method:


  • Initially , boil the noodles and run through the cold water and keep it aside.
  • Heat oil in a pan, add the onions, fry them well. 
  • Add the gg paste and saute for two minutes.
  • Add the washed and drained chicken kheema. Add little salt. Saute for 3 mins.
  • Add the tastemakers to it. Mix them well.
  • Close and cook for 3 mins till the chicken is cooked. Stir again.
  • Finally add the boiled noodles and mix well.


Relish the aroma of chicken!

Chicken pakoda

Its an authentic starter , you will definitely love it. Try it today!



Ingredients:


  • Curd-few tsp
  • Chicken pieces - 250 kg
    Chilly powder - 11/2 tsp
  • Salt
  • Ginger garlic paste - 1 tsp
  • Lemon juice - half lemon
  • Besan flour - required
 
Method:

  • Marinate the washed chicken with all the above ingredients except besan flour for 1 hr.
  •  Heat oil in a pan, In a plate add the besan flour. Take each piece of chicken and spread it on the besan flour. 
  • Apply the besan flour  generously on the chicken and fry it on all sides.
  • Strain it and have it as a starter.
















Crispy and crunchy akodas are ready to crunch!

Tandoori bbq Chicken

The new year , we kick started it with a get together with our friends. We jus planned to have a small bbq and to spend time in beach. Two families , we were. I chose chicken to marinate for bbq and chicken mayo Sandwich. Of course some juices and stuff. My friend chose prawns for bbq and she had brought tapioca stuff, it was a kerala dish. Se also made cupcakes and brought for us.

It was a good party though. My baby had a fun time playing with her dad in beach, took a bath in beach. She also built sand castle.I went on a small round in cycle.After so many years, driving bicycle was fun. It was raining heavily.As we started bbqing, it stopped. Thank god, the rain again poured off, s soon as we finished our circus with bbq and started to eat off hot hot Tandoori Chicken and Shrimps.


Off to the recipe:

Ingredients:

  • Curd: hung curd - 1 cup
  • Chicken boneless - small pieces - 500 kg
  • Capsicum - cut into square pieces - 1
    Chilly powder - 11/2 tsp (preferable kashmiri chilly powder)
  • Salt
  • Ginger garlic paste - 1 tsp
  • Lemon juice - half lemon
  • Color - optional ( I didnt add)
  • BBQ Skewers - few soaked in water
 

Method:

  • Marinate the above ingredients along with capsicum for about 24 hrs.
  • Before bbqing or grilling , place it on the bbq skewers with one piece chicken, one piece capsicum alternatively and place it on the tandoor.
  • Keep flipping its sides often.




 Note:
  •  If you feel, you can brush oil before frying. But not necessary.
  • You can add tandoori masala, if you prefer.
  • Wet bbq skewers will not be burnt, while frying.


Yummy Tandoori BBQ Chicken is ready to serve with green chutney.

Chicken Kheema Masala






Super side dish for chapathis, rotis. But I served it as masala Dosa whichwas a super hit in my home. It can be served with anything. It can also be kept inside bread for sandwich. Perfect side dish ! Try this out..

 

Ingredients:

  • Chicken kheema - 200 gms
  • Onion - 2- 3 finely chopped
  • Tomato - 2 chopped
  • Ginger garlic paste - 1 tsp
  • Salt
  • Oil
  • Coriander leaves
  • Water


To Grind:

  • Coconut - 1/4 cup
  • Cinnamon - 1"
  • Cloves- 4
  • Fennel seeds - 1 tsp
  • Chilly powder - 1 tsp
  • Coriander powder - 2 tsp









Method:

  • Heat oil in a pan, add fennel seeds. When it splutters. Add the chopped onions. 
  • Fry it till brown. Add the tomatoes and fry.
  • add gg paste and saute it well.
  • Meanwhile grind the " to grind" ingredients. Use water and grind into a paste.
  • Add the kheema , saute it for another 2 mins.
  • Add the ground masala to the chicken. Stir for about 5 mins.
  • Add salt and water. Add the required water , according to the consistency you want. 
  • Add the coriander leaves and mix it.



Super crispy masala dosa with kheema stuffing.

Chicken Manchurian

 Wishing all a very happy new year !
Chicken Manchurian was a super side dish for fried rice. It was quick to make and try this out...




Ingredients:

Chicken boneless pieces - 200 gms
Corn flour - few tsps ( for frying and for sauce)
Ginger garlic paste - 1 tsp
Garlic - 4 cloves finely hopped
Spring onions - chopped
Green chillies - 3 finely chopped
Ginger grated - 1 "
Oil
Soya sauce
Salt
Water




Method:

  • Wash and marinate the chicken pieces with corn flour , salt and ginger garlic paste.
  • Heat oil in a pan, and fry the chicken pieces. 
  • Heat a tsp of oil, add the chopped garlic, chilly and ginger. Fry the spring onions.
  • Add soya sauce, ajinomotto and saute well. Add salt too.
  • Mis 2 tsps of cornflour in water and pour it in the pan. Stir for few seconds, it will become thicker. add the fried chicken pieces and saute it once.
  •  Serve by garnishing spring onions.

 

 Serve it with Chicken fried rice !

Chicken fried rice



 Chinese Chicken fried rice is a simple and wonderful one pot meal. I love fried rice anytime  and of course with few meat pieces. Try this simple Chinese fried rice.

Ingredients:


  • Basmati Rice - 1 cup
  • Chicken boneless pieces
  • Capsicum - 1 finely chopped
  • Carrot - 1 grated
  • Spring onions - 1 finely chopped
      • Cabbage - little
  • Pepper powder
  • Salt
  • Garlic - 4-5 finely chopped
  • Ajinomotto - little
  • Soya sauce - 1 tsp
  • Corn flour - few spooons
  • Ginger garlic paste

 
Method:


  • Wash and marinate the chicken pieces with corn flour , salt and ginger garlic paste.
  • Heat oil in a pan, and fry the chicken pieces.
  • Heat oil in a pan, season garlic.
  • Add the onion and vegetables one by one.Fry them.
  • Add soya sauce, little pepper powder.
  • Add the boiled rice, mix well.
  • Sprinkle ajinomotto,salt and pepper powder. Add the fried chicken pieces.
  • Mix them well.
  • Add Spring onions on top. 

 

 Serve hot with Chicken Manchurian !

Tandoori Chicken Tikka

 Christmas treat - I made Chicken Biryani and tandoori chicken tikka.

 
 


Yummiest Starter i ever had. I couldnt grill it, since I didnt have griller or oven with me. I made tava fry version.It turned out to be massive success.




I did not add any food color. Wanted to give a natural appearance for the tandoori.



Ingredients:

  • Chicken - 500 gms with or without bone
  • Curd - 3-4 tsp or even more.
  • Ginger garlic paste - 11/2 tsp
  • Chilly powder or kashmiri chilli powder - 3 tsp
  • Salt
  • Lime - 2
  • Curry leaves - for frying





Method:

  • Wash chicken and mix chilly powder, lemon juice,salt, gg paste and curd together.
  • I kept it for 24 hrs. It gave a juicy, yummy flavor.
  • Heat oil or butter in a pan, Add the marinated chicken at once and cook in medium flame.
  • Add the curry leaves. It has to be cooked for 15-20 mins till the color changes.
  • Do not add water, as it is a starter. It has to be cooked in the curd.
  • It gives a wonderful aromatic taste to the chicken once its cooked.
  •  Turn the sides often, for the chicken to cook on all the sides. Colour changes into darkbrown or even black( tandoor effect).

  • Transfer it to a plate wrapped with kitchen towel.





Serve it with lemon wedges and onion slices.
