Murungakkai poricha kootu / Drumstick fried Curry



Ingredients:

  • Drumstick - 1
  • Moong dal - one handful
  • Tomato - half
  • Urad dal - 1 tsp
  • Peppercorns - 1 tsp
  • Red chillies - 2
  • Cumin seeds - 1 tsp
  • Coconut grated - one handful
  • Salt
  • Oil
  • Water
  • Turmeric powder


To temper:

  • Mustard seeds
  • Red chilly
  • Urad dal
  • Curry leaves
  • Hing


Method:

  • In a vessel, add the washed moong dal with little water, cut drumstick, turmeric powder and chopped tomato.
  • Pressure cook for 4 whistles.
  • Heat a tsp of oil and roast urad dal, pepper and red chilly.Allow it to cool . Grind along with raw cumin seeds and coconut into a wet paste.
  • Now remove the moong dal mixture from cooker and add salt to it.
  • Give it a boil. Add the ground paste to it.
  • Allow it to boil for 3-4 mins.
  • Temper the above ingredients and mix well.

Perfect combo for steamed rice.

Sambar - My hubby's spl dish

Ingredients:

  • Toor Dal - 1 cup
  • Tomato - 2 small
  • Onion - 1
  • Curry leaves
  • Green chilly - 2
  • Sambar powder - 2 tbsp
  • Chilly powder - 1/2 tsp
  • Drumstick / raddish / brinjal
  • Turmeric powder- 1/2 tsp
  • Salt
  • Water
  • Oil
  • Coriander leaves


Method :

  • Boil Dal, one tomato,turmeric powder,oil 1 tsps.
  • Heat oil in a pan, season cumin seeds,mustard seeds, curry leaves,Asafoedita.
  • Add green chilly and onions.Fry them. Add the cut vegetables. Saute it well.
  • Add tomatoe.cook them.
  • Add cooked dal, Sambar powder,chilly powder, salt. Add required water.
  • Cook for 10 mins in medium flame.

Garnish with Coriander leaves.


More kuzhambu

Ingredients:

  • Curd - 1 cup
  • Cumin seeds - 1 tsp
  • Coriander seeds - 1 tsp
  • Coconut - 5 tbsp grated
  • Green chillies - 2
  • Turmeric powder - 1/2 tsp
  • Salt
  • Mustard seeds
  • Oil
  • Water

Method :

  • Grind coconut,chillies,coriander seeds,cumin seeds together.
  • Convert curd into butter milk. Add water to curd.
  • Add the ground paste to the curd.Add turmeric powder.
  • Allow it to boil.
  • Cook till raw smell of coriander seeds vanishes.
  • Season with Mustard seeds.

Vegetables that can be added to it : Ladies finger, Pumpkin.

Serve hot with rice and paruppu usili. Unbeatable Combination.




Murungakkai Vatha kuzhambu

Ingredients:

  • Tamarind - big lemon size
  • Drumstick / potato / capsicum / ladies finger/brinjal
  • Mustard seeds
  • Fenugreek seeds - 1/2 tsp
  • Red chilly - 2
  • Sambar powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Asafoedita
  • Toor dal - 1 tsp
  • Oil
  • Water

Method :

  • Heat oil in a pan, season mustard seeds,fenugreek seeds,toor dal, red chilly.
  • Add turmeric powder, sambar powder. Add little water and make it like a gravy.
  • Then add the vegetable.Saute for few minutes.Add salt.
  • Now add tamarind extract with water. Allow it to boil till the raw smell of tamarind disappears and the curry's consistency is thickened.Also check if the vegetable is cooked well.

Vatha kuzhambu is ready



Kara kuzhambu

Ingredients:

  • Tamarind -big lemon size
  • Small onions - 1 cup
  • Tomatoes- 2
  • Mustard seeds
  • Fenugreek seeds - 1/2 tsp
  • Garlic - 1 full
  • Soaked black channa / black eyed peas(karamani) - 1/2 cup
  • Drumstick - 1
  • Brinjal - 1
  • Turmeric powder - 1/2 tsp
  • Sambar powder - 1 1/2 tsp
  • Salt
  • Curry leaves
  • Coconut milk - 1 cup
  • Oil
  • Water

Method :

  • Heat a kadai with oil , season mustard seeds,curry leaves and fenugreek seeds. Boil the channa separately and keep aside
  • Add small onions, saute well.Add garlic.
  • Add tomatoes. Fry them well.
  • Add Chilly powder and turmeric powder.
  • Add little water and make it like a gravy.After are mixed well.
  • Add the vegetables and Channa. Stir well.Add salt.
  • Now add Tamarind extract and water. Cook it for about 10 mins or till the raw smell of tamarind vanishes.
  • Finally add coconut milk and allow it to boil once.

Kara kuzhambu is ready.

Bitter guard pitla

Ingredients:

  • Bitter guard – 250 gms
  • Toor dal – ¾ cup
  • Tamarind – a lemon size
  • Sambar Powder – 1 tbsp
  • Salt to taste
  • Turmeric Powder – ½ tsp
  • Oil – for seasoning

To Grind: (fry with little oil)

  • Coriander seeds – 1 tbsp
  • Urid dal = ½ tsp
  • Gram dal – 2 tsp
  • Red Chilli – 2 to 3
  • Coconut – Optional
  • Hing – little
  • Curry leaves – little

To season:

  • Mustard – ½ tsp
  • Urid dal = ½ tsp

Cooking Method:

  • Soak the tamarind in water.
  • Boil toor dal with turmeric in water and smash it well.
  • Cut Bitter guard into round pieces.
  • Heat the pan , add the tamarind water along with little turmeric powder, sambar powder , Salt and allow it to boil.
  • Add the Bitter guard.
  • When its cooked, add the ground paste and the smashed dhal in it ,stir it well and allow it to cook .
  • Finally season it.
  • Serve it hot with Rice.

Vegetable(Pumpkin, snake guard,chow chow,cucumber) kootu


Ingredients:

  • Required Vegetable - 250 gms - 300 gms
  • Moong dal - little
  • Tomato - 1/2 to 1
  • Jeera - 2 tsp
  • Coconut grated - 4 -5 spoons
  • Turmeric powder - 1/2 tsp
  • Sambar powder- very little
  • Green Chilly - 2
  • Salt
  • Mustard seeds - 1/2 tsp
  • Red chilly - 2
  • Urad dal - 1/2 tsp
  • Curry leaves

Method:

  • Wash and cut the vegetable into cubes.
  • Wash moong dal and add it with the vegetables. Add chopped tomato. Add little water.
  • Add turmeric powder, chilly powder and pressure cook for 4-5 whistles.
  • Remove it and smash it well. Grind coconut, green chilly , and jeera into fine paste and add it to the smashed vegetable.
  • Add salt and boil for some time.
  • Temper with mustard, urad dal, and red chillyand curry leaves.
  • Kootu ready.
Serve with rice / Chapathi.
