Egg capsicum roast

Wishing all my friends a very happy tamil new year.. i have been little busy and lazy in blogging. I must make sure that i regularly post dishes here. I have been exploring baking cakes and cookies as well. Recently have tried few new dishes. There were failures too. But rectifiable. Today’s dish is with egg. Suddenle tried this simple dish and it was an instant hit. Basic masala , most of you might have tried. But i gave it a try and my family, guests who came home and my dad loved it when i made for them. Try and leave your feedback.  


 Ingredients:
  • Egg- 4
  • Onion - 1 large
  • Tomato - 1 small
  • Capsicum- half
  • Sambar powder - 1 tsp
  • Salt
  • Curry leaves
  • Mustard seeds - for tempering
  • Oil
  Method:  
  • Wash and boil the egg. Cut into halves or quarters however you prefer.
  • In a pan, add oil. Temper mustard seeds, curry leaves.
  • Add the finely chopped onions, roast them until dark brown. Fry well which will enhance the taste of this dish.
  • Add the chopped tomato, saute well.
  • Add the finely chopped capsicum, fry them along with onion and tomato.
  • Add salt ,turmeric powder and sambar powder. Stir well.
  • Close and cook until it becomes mushy.
  • Add the sliced eggsand mix well allng with the masala.let it roast nicely.
  • Add chopped coriander leaves and garnish.

  Goes well with sambar rice, rasam rice and even curd rice.

Masala toast

Today's dish or the recipe is a toast. It is perfect for breakfast, midnoon snack, evening snack, a sudden snack or tiffin for guests. I simply loved and my kiddo enjoyed it as well. This recipe was made by Venkatesh bhat sir, but i have changed one ingredient in it. We can make this toast with so many other variations by adding spinach puree or chopped spinach. We can also add chopped mushroom and capsicum to it. Kids those do not take egg can have this. Its a nutritous toast on the whole. The ingredients are simple those that are available at our home. Do try this and write to me.  


  Ingredients:
  • Bread - 6 slices
  • Eggs -2
  • Milk - half cup
  • Coriander leaves- finely chopped
  • Pepper powder -1/2 tsp
  • Salt
  • Green chutney - 1/2 tsp
  • Oil
Method:
  • In a bowl, beat the eggs, add all the ingredients one by one.
  • Cut the bread into half.
  • Heat a tava, add oil. Dip each slice in the mixture on both the sides and place it on te tava.
  • Add oil for toasting.
  • Flip the bread on both the sides and toast nicely.

Soft bread masala toast is ready for kids.

Egg omelette kurma / mutta omelette kurma






Egg omelette kurma was a tasteful and flavourful kurma to have with rotis and rice! I have had this egg omelette kurma in my childhood and I forgot this dish totally. Recently I met my school friend after almost 17 years. I met her in Singapore in my house. She stays here. I had invited her home for lunch. She brought this egg omelette kurma for me in a box. What a taste. I am not able to forget even when I type here.

I asked her the recipe, sheep was kind enough to share it with me. Please do try the recipe and post you're feedbacks..




Ingredients for omelette:


  • Onion-1 finely chopped 
  • Green chilli -1
  • Pepper powder-1tsp
  • Salt
  • Eggs -  2-3
  • Garam masala powder a pinch
Method:

 Whisk it all together nd prepare omelette.

Ingredients for kurma: 

  • Coriander powder - 2 tsp
  • Cumin powder - 1/4 tsp
  • Fennel powder -1/4 tsp
  • Coconut
  • Whole garam masala
  • Ginger garlic paste - 1 tsp
  • Tomato -1
  • Onion -1
  • Garam masala powder
  • Chilly powder -1 tsp
  • Soaked and boiled peanuts -1 cup
  • Water
  • Salt
  • Coriander leaves
  • Oil

Method:


  • Dry roast the coriander powder , cumin powder , fennel powder and grind it with coconut.
  • Heat oil in a pan,  Saute whole garam masala and add chopped onions. Fry nicely
  • Add ginger garlic paste, sauté till raw smell vanishes.
  • Add tomato,garam masala powder, red chilli powder and fry till the tomato becomes mushy.
  • Add the boiled ground nut, dry roasted masala with coconut. Add salt
  • Add water and allow it to boil it to needed consistency. Add the omelet peices nd boil for 1 min...  Garnish with lots of chopped coriander leaves.




Tasteful omelette kurma ready to serve!

Mutta thokku / Egg masala


Good morning friends. today we go with a side dish recipe using egg. This egg masala is a different recipe compared to the other recipes, it gives a unique flavor to the masala. My mom used to make this thokku very often. It can be done without egg as well. We can add poached egg also in this. Vegetarians can also add tofu, paneer, mushroom in this masala. Yesterday night I made this thokku for chapathies. My hubby who shouted no tomato thokku , finished the entire pan of masala. Its not going to be regular thakkali thokku type. enjoy and try this flavorful thokku.



Ingredients:


  • Egg - 4 boiled
  • Onion - 2 finely chopped
  • Tomato ripe ones - 2 finely chopped
  • Salt
  • Coriander leaves - for garnishing
  • Cumin seed powder - 3 tsp
  • Chilly powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Fenugreek seeds - 1 tsp
  • Oil
  • Water



Method:


  • Boil the egg and cut into halves and keep aside.
  • Heat oil in a pan, splutter fenugreek seeds.
  • Add the chopped onions and fry them well till it becomes translucent.
  • Add the cumin powder, chilly powder, turmeric powder and salt.
  • Add the chopped tomatoes as well. close and cook for 5 minutes.
  • Add required amount of water you need and add the egg pieces.
  • Close and cook for 10 mins for the thokku to blend well with egg.
  • Switch off when the oil comes out.
  • Garnish with coriander leaves.



Serve with rotis and even hot rice would do!

Broccoli Omlette



Omlette is a super side dish for all the rice items and as a starter too.. Adding broccoli to it adds more valur=e tot th dish and makes it more healthier. A best way to add broccoli in your kids meal.. It tastes great too.






Ingredients:


  • Broccoli - 10 florets 
  • Egg -2
  • Salt
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Oil



Method:



  • Wash and chop the broccoli florets into small pieces.
  • In a bowl, mix egg, chopped broccoli,turmeric powder,pepper powder and salt.
  • Stir well and mix it.
  • Heat a tava, add a tsp of oil, pour the mixture. Add a tsp of oil to cook.
  • Flip over the omlette to cook on the other side.



Yummy healthy omlette ready!

Guest Post #2 by Mrs.Sowmeya Swaminathan - Cauliflower Broccoli Fritters

Good morning and Happy monday friends! Here is the second entry for the guest post by Mrs.Sowmeya Swaminathan. She is making a new snack dish using cauliflower and broccoli.. I am very keen in trying this new dish.

Sowemya is a working mom from the middle east with a 7yr old son and a hubby who travels a lot. She loves reading , cooking and gardening. My balcony garden is my pride and joy apart from my kiddo, of course. She says, "This cauliflower and broccoli fritter is a very easy weeknight dinner or a lunch box snack. It is simple, easy to make and leaves a lot of space for improvisation which I love. And, it makes sure my family covers the basic food groups at one shot."

Ingredients:

  • Cauliflower florets, roughly chopped - 2 cups
  • Broccoli florets, roughly chopped - 1 cup
  • Red chilli garlic paste (I used this as I had it in my fridge, but you can substitute with grated garlic, red chilli powder or chopped jalapenos) - 2 -4 tsp
  • Egg -1
  • All purpose flour - 1 tbsp
  • Corn flour - 1/4 tbsp 
  • Any cheese (I used mozzerella, but feta or parmesan ) - 1 to 2 tsp
  • Salt as required
  • Oil - required for shallow frying

Method:


  • Boil water in a large pan. Add the broccoli florets and cook till tender.
  • Remove from heat and Strain the broccoli. Rinse with cold water to stop from over cooking the broccoli.
  • Repeat for Cauliflower. Pat the veggies dry and mash a little bit. 
  • Broccoli heads must be visible, but it should be mixable. Add the other ingredients one by one and give it a good stir.


  • Heat a Heavy bottomed pan with oil. Take a tablespoon of batter and let it drop in the pan. It will look weird, but will stay together. 
  • Cook on both sides till golden brown and serve hot. It can be served individually as well. 

This is a great way to make picky eaters try broccoli.  



Note by her:

  • It can be made into a sandwich or use a tortilla base to roll it in a roll. 
  • If I am making a roll, I use some coriander chutney as the spread. 
  • The same method can be used for various veggies such as cabbage with spinach and potato, corn with potato etc. This can be made eggless by adding a softer cheese like feta or cream cheese. The spice quotient can be upto you too. incase using cabbage, I add grated ginger and spring onions for a chinese flavour.

Egg Burji

Super simple side dish for chapathies. This egg burji is made by hubby. I love to eat it.


 Ingredients:

  • Egg - 3-4
  • Onion - 1 big chopped
  • Green chilly - 2
  • Ginger garlic paste - 1/2 tsp
  • Salt
  • Oil
  • Curry leaves

Method:

  • Heat oil in a pan, add the chillies, curry leaves and onions. Fry them.
  • Add gg paste. Saute for 2 mins. Add the eggs and salt.
  • Stir it occasionally till the eggs are boiled.

 Super Delicious Egg burji is ready!

Murungakeerai Muttai poriyal


Ingredients:

  • Murungakeerai - 1 cup
  • Egg - 2
  • Pepper powder
  • Onion - 1 finely chopped
  • Salt
  • Mustard seeds
  • Red chilly - 1
  • Oil



Method:


  • Heat oil in pan, temper mustard seeds and red chilly. Add onions to it and fry nicely.
  • Add the murungakeerai and lil salt. Sprinkle some water and allow it to cook for 3-4 mins. 
  • Once the keerai is cooked well, add the eggs to it. Mix it well.Add little more salt to it.
  •  Finally sprinkle some pepper powder. It tastes yummy.

Cabbage omlette

Cabbage omlette tastes really nice. its more healthy as it contains eggs and cabbage.try it out.

Ingredients:

  • Cabbage chopped - 1 cup
  • Green chilly - 1
  • Oil
  • Mustard seeds.
  • Turmeric powder
  • Eggs -2
  • Salt



Method:

  • In a pan, add little oil. temper mustard seeds, curry leaves and green chilly.
  • Add cabbage, salt and little water. Allow the cabbage to boil and cook for sometime.
  • When it is done. Remove it.
  • In a bowl, add the eggs, salt needed for eggs and the cabbage mixture.
  • Add little turmeric powder. stir well.
  • Heat tava, pour the mixture, add oil and cook it to a omlette.
  • Cook on both sides.  Serve hot.

Today's recipe is:

I saw this recipe done by Chef. Damodharan.. Watched the show on TV. Found it simple and interesting. So, I tried the recipe. It came out really well.Do try it out!

Ingredients:

For marination and fry:

  • Egg boiled -3 Sliced into quarter
  • Corn flour - 2 tbsp
  • Maida - 2 tbsp
  • Soya sauce - 2 tsp
  • Salt
  • Red chilly paste - 1 tsp
  • Ajinomotto


For the sauce:

  • Onion - 1 finely chopped
  • Soya sauce - 2 tbsp
  • Ajinomotto
  • Salt
  • Pepper powder
  • Red chilli paste - 1/2 tsp
  • Sugar - 1/2 tsp
  • water


Method:

  • Mix all the ingredients " for marination" ingredients together.
  • Heat oil in a pan, fry the eggs that are marinated.Keep it aside.


For sauce:

  • Heat little oil in a pan.add the onions. Fry them.
  • Add salt, sugar, red chilli paste and saute them.
  • Add the pepper powder and soya sauce.Mix them well.
  • Add water and allow the sauce to noil for few mins.
  • Finally add the fried eggs.
  • Mix well and serve.

Spicy Bread Toast




Ingredients:

  • Bread 4 slices
  • Egg - 2
  • Besan flour - 3 tsp
  • Salt
  • Pepper powder - 1 tsp
  • Ginger garlic paste - 1/2 tsp
  • Coriander leaves - little chopped

Method:

  • Mix all the ingredients in a plate.
  • Dip the bread in the mixture and toast it in the tava.

Serve with Tomato Ketchup.

Simple Kothu Chapathi



Ingredients:

  • Left over Chapathi - 6
  • Egg - 3
  • Onion - 1 finely chopped
  • Green chilly - 2 finely chopped
  • Garam masala powder - 1 tsp
  • Salt
  • Oil
  • Fennel seeds - 1 tsp
  • Curry leaves


Method :

  • Chop the chapathi into small pieces.
  • Heat oil in a Kadai , temper fennel seeds and curry leaves.
  • Add onions and fry them well.
  • Add salt and mix well.
  • Then add the eggs , mix it to scramble it well. Once its partially cooked, add the chapathi and stir well. Once the chapathi is blended with the masala, add garam masala powder and give a stir.
  • Yummy Kothu Chapathi is ready.
  • Serve with Raitha.
