Mango pickle Instant

Bye all of you!! Will blog from India whenever I get time. All of you enjoy.


Ingredients:

  • Raw Mango - 1
  • Chilly powder - 1 tsp
  • Oil
  • Mustard seeds
  • Salt
  • Hing

Method:

  • Cut the mango into small pieces.
  • In a tempering ladle add oil, temper mustard seeds, hing and chilly powder.
  • Add it to the mango.
  • Add salt and mix well.

Murungakkai poricha kootu / Drumstick fried Curry



Ingredients:

  • Drumstick - 1
  • Moong dal - one handful
  • Tomato - half
  • Urad dal - 1 tsp
  • Peppercorns - 1 tsp
  • Red chillies - 2
  • Cumin seeds - 1 tsp
  • Coconut grated - one handful
  • Salt
  • Oil
  • Water
  • Turmeric powder


To temper:

  • Mustard seeds
  • Red chilly
  • Urad dal
  • Curry leaves
  • Hing


Method:

  • In a vessel, add the washed moong dal with little water, cut drumstick, turmeric powder and chopped tomato.
  • Pressure cook for 4 whistles.
  • Heat a tsp of oil and roast urad dal, pepper and red chilly.Allow it to cool . Grind along with raw cumin seeds and coconut into a wet paste.
  • Now remove the moong dal mixture from cooker and add salt to it.
  • Give it a boil. Add the ground paste to it.
  • Allow it to boil for 3-4 mins.
  • Temper the above ingredients and mix well.

Perfect combo for steamed rice.

Spicy Bread Toast




Ingredients:

  • Bread 4 slices
  • Egg - 2
  • Besan flour - 3 tsp
  • Salt
  • Pepper powder - 1 tsp
  • Ginger garlic paste - 1/2 tsp
  • Coriander leaves - little chopped

Method:

  • Mix all the ingredients in a plate.
  • Dip the bread in the mixture and toast it in the tava.

Serve with Tomato Ketchup.

Simple Kothu Chapathi



Ingredients:

  • Left over Chapathi - 6
  • Egg - 3
  • Onion - 1 finely chopped
  • Green chilly - 2 finely chopped
  • Garam masala powder - 1 tsp
  • Salt
  • Oil
  • Fennel seeds - 1 tsp
  • Curry leaves


Method :

  • Chop the chapathi into small pieces.
  • Heat oil in a Kadai , temper fennel seeds and curry leaves.
  • Add onions and fry them well.
  • Add salt and mix well.
  • Then add the eggs , mix it to scramble it well. Once its partially cooked, add the chapathi and stir well. Once the chapathi is blended with the masala, add garam masala powder and give a stir.
  • Yummy Kothu Chapathi is ready.
  • Serve with Raitha.

Urad dal ki Kachori - Off to India

This Kachories are actually deep fried. But my grandma makes it like chapathies instead of making like Puris. Very healthy and tasty recipe. Do try it. And yes, me going on a vacation to India this friday....Yahoooooooooooo. Gonna have mom and grandmom's food.....

Ingredients:

  • Urad dal - 1 cup
  • Red chillies - 2-3
  • Curry leaves
  • Hing
  • Salt
  • Oil
  • Mustard seeds

For Chapathi:

  • Wheat flour - 1 cup
  • Salt
  • Oil - 2 tsp
  • Water


Method:

  • Knead the Chapathi dough into a smooth dough and keep aside for 2 hrs.
  • Soak urad dal for about 1 hr and grind it coarsey along with red chillies and salt.
  • Mix the chopped curry leaves and hing to it.



  • Heat oil in a Kadai, temper mustard seeds and add the urad dal mixture into it and fry them. Cover and fry them until it boils and get separated like this (picture).



  • Now take small balls of wheat flour,and stuff this urad dal mixture and again make like stuffed parathas.











  • Heat tava, make these chapathis using oil.












Yummy Kachoris ready. Serve hot with Raita / Pickle or any side dish.
