Dates kheer/ Perichampazha payasam

Festive season has all begun and everyone of us would be breaking our heads as to what sweet can be done innovative. Here is one such kheer, it's super healthy as well as tasty!

So put your hands on and try this yummy kheer at your home and send me feedback! My moms recipe..



Ingredients:



  • Milk - 1/2 litre
  • Dates - 1 cup
  • Honey - required
  • Cardamom powder - required
  • Chopped nuts




Method:


  • Grind dates and honey in 
    mixie,
  • Boil the milk  and reduce the quantity into half  the quantity.
  • Allow the milk to cool. Boil the datees and honey misture upto one boil and allow it to cool as well.
  • While it  is warm , mix dates and honey to the warm milk.
  • Add cardamom powder and nuts.
  • Garnish with few chopped dates , so that you get chunky bites while enjoying the kheer.



 Serve warm or chilled according to your taste!

Note: if you want to store the dates syrup, dont add milk..
Grind Dates and honey by adding little water and boil the mixture in low flame to jam consistency and store.
When  needed mix one tsp jam in milk and drink hot or cold...

Mixed Cutlet/ Vegetables Cutlet


August month starts with festivals and continuously there are lots of festivals from there on... Let me share a tasty Cutlet on this month.. This recipe will as well as go for 5 ingredients fix challenge by Lakshmi Vimala.. It's a simple and tasty one..

For the 5 ingredients fix challenge, my ingredients are Cheese, rice, Vegetables, Bread crumbs, garam masala.





Ingredients :


  • Mozarella Cheese- 1cup
  • Steamed Rice - one cup
  • Coriander leaves
  • Assorted veggies ( Carrot, capsicum , corn) - 2 cups
  • Bread crumbs
  • Oil for frying
  • Salt
  • Garam Masala - 2 tsp
  • Chilly powder - 1 tsp





Method:


  • Grate the cheese in  mixing bowl.
  • Add the steamed rice to it
  • Add the chopped veggies and coriander leaves.
  • Add garam masala, chilly powder and salt.
  • Knead it into a dough and make balls.i have used rice as binding agent , instead of potatoes.

  • Place a tava, add oil  , rub both sides on bread crumbs and place the patties on the tava and shallow fry the cutlets.

  • Yummy melting cheese cutlets are ready to munch in this beautiful weather.
  • Can you people see the chewy cheese melted...

How to make Bread crumbs....


Bread Crumbs is made out of dried breads. Its available in all the stores and super market. why cant we make it at home? Its very easy to make at home. Bread crumbs is used for snacks. We use crumbs for making cutlets, fingers, balls, for all the deep frying snacks.. Crumbs are used. Try it at home. Easy to make crumbs here..




Ingredients:


  • Bread slices - 5




Method:


  • Heat a Tava on the gas, place the bread slices on the tava.
  • Dry roast the bread on one side.
  • Turn on the bread to dry roast on the other side.
  • Once done. It will become harder. When it is cooled down.
  • Crumble it into mixer and go for a round.
  • In a minute dry bread crumbs are ready.



Powdered crumbs are ready to use for the snacks for frying.

American corn Cheese balls


Starter today.... One of the yummiest starter here.. Simple and easy o make snack. Rainy days would be awesome with this beautiful snack or starter.Cheesy starter for perfect evening.. It can be a wonderful Party snack as well.




Ingredients:


  • American Corn kernels - 1 Packett
  • Mozarella cheese grated - 1 pack
  • Coriander leaves - chopped
  • G.Chilly - 3 finely chopped
  • Bread Crumbs - 2 tbsp
  • Salt







Method:


  • Grind the corn kernels in the mixer into a coarse mixture.
  • Mix the ground mixture , coriander leaves, chillies, cheese and salt into a mixture.


  • Make small balls from the dough.


  • Roll it on the bread crumbs.
  • Heat oil in a pan and deep fry the balls.




Melting yummy cheesy balls ready. Grab one by one...

Bitter gourd fry/ Sun Fry/Pavakkai varuval


Yummy starter here... Bitter gourd lovers , definitely try this bitter gourd fry. it can be used as side dish for lunch. It can be used as a snack to munch instantly. it can be stored in containers. Very simple procedure and tasty too.. As everyone knows bitter gourd is healthy. Take bitter gourd once a week.  I called it sun fr because my daughter named it by seeing it . She said it looks like sun.. 



Ingredients:



  • Bitter gourd -3
  • Gram flour - required for frying
  • Salt
  • Chilly powder - 2 tsp
  • Tamarind pulp - 1 tsp



Method:


  • Cut the bitter gourd into round or into thin round slices. Remove all the seeds.


  • Marinate bitter gourd with tamarind pulp, salt and chilly powder for 30 mins.
  • Heat oil in a pan, mix the marination with required gram flour and mix nicely.
  • Put one piece by piece and deep fry it.



Enjoy this in all climate with or without rice!

Paneer Capsicum Cheese Toast


Here is a simple recipe for Breakfast. It can be considered as snack for kids too.. A very simple dish , tasty, healthy and less time consuming. Its a toast, can be had as sandwich also. Do try this yummy simple recipe....




Ingredients:



  • Bread slices - 6
  • Red Capsicum - half (cut into Julienne)
  • Green Capsicum - half (cut into Julienne)
  • Paneer - cut into cubes
  • Cheese slices
  • Onion - cut into Julienne
  • Butter



Method:



  • Take the bread slices , apply butter on all sides of the bread.
  • Place the vegetables in between the slices, place the onions.
  • Place the Paneer cubes also.
  • Place the cheese slices.
  • Close it with other slice.
  • Switch on the toaster, apply butter on the walls of the toaster.
  • Place the prepared sandwich inside. On the toaster to orange or red color.
  • Once its done, it turns into green color.

Khoya Jamuns/ mawa jamuns

Gulab Jamuns are a special sweet always.... we all love to have it anytime.. There are quite a few methods of making jamuns. this is one of the methods using fresh Khoya... I bet you can never resist from having  or 3 at a stretch... Once when you try hoya jamuns, you will stop buying instant mixes from shops. Its price friendly as well as tasty..

                         


Ingredients:


  • Unsweetened Khoya/ mawa - 200 gms
  • Maida/ Flour - 3 -4 tsp
  • Cardamom powder - 1/2 tsp
  • Sugar - 300 gms
  • Water - 200 ml
  • Vanilla essence - 1 tsp

     



Method:


  • For sugar syrup, heat sugar and water in a pan.. After the sugar is dissolved , check for the consistency.
  • For jamuns , the syrup should be little sticky. Switch off the sugar syrup.
  • Add the essence to it.
  • I used  Nandhini brand Khoya.


  • Meanwhile, knead the dough for the jamuns.
  • In a vessel, add the khoya(room temperature), maida, cardamom powder.



  • Knead the dough with the moisture of khoya itself. If its not forming into a dough, sprinkle little water.
  • Make small balls out of the dough.


  • Heat oil in another pan. Fry these balls on medium flame.
  • Add it to the sugar syrup.
  • Let it soak for sometime.
