Tandoori bbq Chicken

The new year , we kick started it with a get together with our friends. We jus planned to have a small bbq and to spend time in beach. Two families , we were. I chose chicken to marinate for bbq and chicken mayo Sandwich. Of course some juices and stuff. My friend chose prawns for bbq and she had brought tapioca stuff, it was a kerala dish. Se also made cupcakes and brought for us.

It was a good party though. My baby had a fun time playing with her dad in beach, took a bath in beach. She also built sand castle.I went on a small round in cycle.After so many years, driving bicycle was fun. It was raining heavily.As we started bbqing, it stopped. Thank god, the rain again poured off, s soon as we finished our circus with bbq and started to eat off hot hot Tandoori Chicken and Shrimps.


Off to the recipe:

Ingredients:

  • Curd: hung curd - 1 cup
  • Chicken boneless - small pieces - 500 kg
  • Capsicum - cut into square pieces - 1
    Chilly powder - 11/2 tsp (preferable kashmiri chilly powder)
  • Salt
  • Ginger garlic paste - 1 tsp
  • Lemon juice - half lemon
  • Color - optional ( I didnt add)
  • BBQ Skewers - few soaked in water
 

Method:

  • Marinate the above ingredients along with capsicum for about 24 hrs.
  • Before bbqing or grilling , place it on the bbq skewers with one piece chicken, one piece capsicum alternatively and place it on the tandoor.
  • Keep flipping its sides often.




 Note:
  •  If you feel, you can brush oil before frying. But not necessary.
  • You can add tandoori masala, if you prefer.
  • Wet bbq skewers will not be burnt, while frying.


Yummy Tandoori BBQ Chicken is ready to serve with green chutney.

Gobhi Manchurian - Version 2

Gobhi manchurian , a perfect chinese starter.This recipe was too simple and tasty. I did not add any artificial color. Try this recipe, you will love it.



Ingredients:


  • Cauliflower florets - 1 cup
  • Ajinomotto - a pinch
  • Soya sauce - 1- 2 tsp
  • Lemon juice - half lemon
  • Chilly powder - half tsp
  • Gg paste -1 tsp
  • Salt
  • Oil
  • Capsicum or spring onions - little finely chopped
  • Corn flour - required


Method:


  • Heat water in a vessel, add the cauliflower florets into the warm water. Drain it and keep it.
  • Marinate with all the above ingredients except oil, capsicum and corn flour.
  • Refrigerate it for 5 hrs.
  • Before frying, add the corn flour to the cauliflower.
  • Heat oil in a pan, deep fry the cauliflower florets till golden brown.
  • Finally, saute the capsicum or spring onions in a little oil and garnish on top of the fried gobhi manchurian.


Super Dooper Gobhi manchurian dry is ready !

Creamy Mutton Kurma - Version 2




 Super flavorful mutton kurma for rotis and rice.
 


Ingredients:

  • Mutton - 500 gms
  • Cinnamon stick - 2"
  • Cloves
  • Cardamom - 3
  • Bay leaf - 1
  • Grated fresh coconut - 1/2 cup
  • Onions finely chopped -1
  • Tomato - 1 chopped
  • Ginger garlic paste - 1 1/2 tsp
  • Green chillies slit length wise - 3
  • Red Chilly powder - 1 tsp
  • Coriander powder - 2 tsp
  • Cumin seeds powder - 1/2 tsp
  • Garam masala powder - 1 tsp
  • Fresh Cream - 1 cup
  • Turmeric powder - 1/2 tsp
  • Salt
  • Oil
  • Coriander leaves


Method:
  •  Boil the mutton in pressure cooker with turmeric powder and little ginger garlic paste.
  • Heat both oil and ghee in a heavy bottomed iron vessel and add whole spices and bay leaf and fry them.
  • Add the chopped onions and fry till transparent.Add the ginger garlic paste,  chopped tomatoes and fry for 4- 5 minutes.
  • Now add all the powders and salt.
  •  Add the cooked mutton , fry over medium heat with lid till the water from the meat is released. Check in between and stir.
  • Add the coconut paste to the mutton and mix well.
  • Add the fresh cream  at this stage.
  • Cover and cook for 3 mins. Add 2-3 cups of water and cook with lid till the mutton is tender and the gravy thickens.Adjust salt and add garam masala pwd and garnish with chopped coriander leaves.
 
Serve hot with Rice/ Chapathi.

Chicken Kheema Masala






Super side dish for chapathis, rotis. But I served it as masala Dosa whichwas a super hit in my home. It can be served with anything. It can also be kept inside bread for sandwich. Perfect side dish ! Try this out..

 

Ingredients:

  • Chicken kheema - 200 gms
  • Onion - 2- 3 finely chopped
  • Tomato - 2 chopped
  • Ginger garlic paste - 1 tsp
  • Salt
  • Oil
  • Coriander leaves
  • Water


To Grind:

  • Coconut - 1/4 cup
  • Cinnamon - 1"
  • Cloves- 4
  • Fennel seeds - 1 tsp
  • Chilly powder - 1 tsp
  • Coriander powder - 2 tsp









Method:

  • Heat oil in a pan, add fennel seeds. When it splutters. Add the chopped onions. 
  • Fry it till brown. Add the tomatoes and fry.
  • add gg paste and saute it well.
  • Meanwhile grind the " to grind" ingredients. Use water and grind into a paste.
  • Add the kheema , saute it for another 2 mins.
  • Add the ground masala to the chicken. Stir for about 5 mins.
  • Add salt and water. Add the required water , according to the consistency you want. 
  • Add the coriander leaves and mix it.



Super crispy masala dosa with kheema stuffing.

Egg Burji

Super simple side dish for chapathies. This egg burji is made by hubby. I love to eat it.


 Ingredients:

  • Egg - 3-4
  • Onion - 1 big chopped
  • Green chilly - 2
  • Ginger garlic paste - 1/2 tsp
  • Salt
  • Oil
  • Curry leaves

Method:

  • Heat oil in a pan, add the chillies, curry leaves and onions. Fry them.
  • Add gg paste. Saute for 2 mins. Add the eggs and salt.
  • Stir it occasionally till the eggs are boiled.

 Super Delicious Egg burji is ready!

Meen Kuzhambu with Coconut

 This fish curry is my mother in law's recipe. She adds coconut to the curry. 

Ingredients:

  • Vanjaram fish - 4 slices
  • Tamarind - lemon size
  • Onion shallots -10-12
  • Tomato - 1 1/2
  • Green chilly - 1
  • Chilly powder- 1 tsp
  • coriander powder - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Mustard seeds
  • Fenugreek seeds - 1/4 tsp
  • Salt
  • Oil
  • Water
  • Curry leaves
  • Coconut paste - 1/4 cup

 
Method :

  • Heat oil in a pan, season mustard seeds , fenugreek seeds.
  • Add curry leaves,green chilly.
  • Saute onions and tomatoes. Add little salt.
  • Add turmeric powder chilly powder and coriander powder. Mix well
  • Add little water. Allow it to boil.
  • Add tamarind extract and add water. Add the remaining salt.Let it boil for 10 mins.
  • Add the fish and cook for few mins.
  • Finally add the coconut paste and allow it to boil once.


 
Serve with hot steamed Rice and Fish fry!!

Chicken Manchurian

 Wishing all a very happy new year !
Chicken Manchurian was a super side dish for fried rice. It was quick to make and try this out...




Ingredients:

Chicken boneless pieces - 200 gms
Corn flour - few tsps ( for frying and for sauce)
Ginger garlic paste - 1 tsp
Garlic - 4 cloves finely hopped
Spring onions - chopped
Green chillies - 3 finely chopped
Ginger grated - 1 "
Oil
Soya sauce
Salt
Water




Method:

  • Wash and marinate the chicken pieces with corn flour , salt and ginger garlic paste.
  • Heat oil in a pan, and fry the chicken pieces. 
  • Heat a tsp of oil, add the chopped garlic, chilly and ginger. Fry the spring onions.
  • Add soya sauce, ajinomotto and saute well. Add salt too.
  • Mis 2 tsps of cornflour in water and pour it in the pan. Stir for few seconds, it will become thicker. add the fried chicken pieces and saute it once.
  •  Serve by garnishing spring onions.

 

 Serve it with Chicken fried rice !
