Vangi Bath


Ingredients:

  • Cooked rice - 1 cup
  • Brinjal - 1 cup
  • Onion - 1
  • Chilly powder -1 tsp
  • Coriander powder - 2 tsp
  • Curry leaves
  • Salt
  • Oil
  • Cashews

To grind:

  • 1 tbsp Urad Dal
  • 1 tbsp channa dal (Bengal Gram dal)
  • 1/4 tbsp Fenugreek seeds
  • 1 tbsp Daniya (Coriander Seeds)
  • 2-3 cloves
  • 1 small cinnamon stick
  • 5-6 dried red chillies ( or as per taste)
  • 1/4 tsp Asafoetida

Method :

  • Heat pan , add oil. Temper mustard seeds, curry leaves.
  • Fry onions till golden brown.
  • Add brinjal, chilly powder, coriander powder , salt and sprinkle little water.
  • Close it and cook well.
  • See if the brinjal is cooked well.
  • Add the cooked rice and add salt for rice alone. Mix well
  • Finally add the ground powder as per requirement.
  • Garnish with fried cashews.
